Pumpkin Bundt Cake

Reviewed: Dec. 6, 2008
Delicious! Like another reviewer suggested, I dusted the Bundt pan with granulated sugar and added pecans to the bottom of the pan. I also added about 1 tsp. of maple extract to the batter. After the cake cooled, I drizzled the top with cream cheese frosting. Really fantastic and easy!

Fluffy Scrambled Eggs

Reviewed: Jun. 10, 2008
Excellent! I made these for a bridal shower brunch and they were fluffy and delicious. As others have posted, DO NOT use condensed milk (as apparently one of the reviewers did unknowingly)! Evaporated milk has no sugar added, so it won't give a sweet taste, it just adds a rich flavor. I'll definitely be making this again.

World's Best Pasta Sauce!

Reviewed: May 17, 2008
LOVE this sauce! It's absolutely amazing and the only sauce recipe I use now. The only slight changes I made were to substitute red wine for the water and brown sugar for the white. I'll usually use turkey sausage instead of pork, but both are delicious. After browning the onions, garlic, and meats, I'll throw everything into a slow cooker and let it cook all day. By dinner time, the house smells wonderful and it tastes like you've spent hours over a hot stove.

Sam's Famous Carrot Cake

Reviewed: Mar. 30, 2008
Scrumptious! I made this for our Easter dinner, and it was a hit! I substituted some applesauce for the oil, as others have suggested (I used about 1/3 c. oil, then added applesauce to the measuring cup until the liquid reached the 3/4 c. mark), but kept everything else the same. Thanks for sharing this wonderful recipe!

Oatmeal Peanut Butter Cookies

Reviewed: Jan. 24, 2008
Wow, are these good! The oatmeal adds a nice texture, and the flavor is amazing. I used the suggestions from ZJSGRAM and they turned out fabulous. I also folded in half a bag of chocolate/peanut butter chips to the dough; I melted the remaining chips and dipped the edges of the baked & cooled cookies in the melted chocolate, then rolled them in chopped peanuts. My coworkers couldn't stop eating them! Thanks for sharing such a fabulous recipe.

Old Fashioned Coconut Cream Pie

Reviewed: Jan. 12, 2008
Amazing! This recipe is phenomenal. The only change I made was to use cake flour for a creamy consistency (1/2 C. + 1 Tbl.). I took other reviewers' advice and used a can of coconut milk for half of the milk; the remainder I used a lactose-free whole milk, and it worked just fine. It never boiled, but it did thicken up beautifully and I removed it from the heat when it seemed thick enough. Thank you for sharing such a wonderful recipe--this is a keeper!

Cabbage Fat-Burning Soup

Reviewed: Jan. 7, 2008
YUM!!! I used low sodium V8 juice and about 2/3rds of a bag of pre-shredded cabbage, as well as some thyme, oregano, marjoram and seasoned salt. I let the soup cook on low all day in the slow cooker, and about 30 minutes before dinner, I added about a cup of whole wheat pasta. Absolutely delicious! Thanks for sharing the recipe--it's definitely a keeper!

Cake Balls

Reviewed: Dec. 17, 2007
Even though this sounded like an odd recipe, I thought I'd give it a try because of all the positive reviews--I wish I had gone with my instinct. I made the Red Velvet/cream cheese icing combo, and that part is okay; but once it was dipped in the almond bark, it was WAY too sweet. Also, little crumbs fell off into the bark and made a red mess. Sorry, this just wasn't my taste.

Saltine Toffee Cookies

Reviewed: Dec. 9, 2007
Simple and delicious! The chocolate was still warm and gooey but I couldn't resist sampling one anyway--wow! These are very easy to make, inexpensive and absolutely delicious. I added just a splash of vanilla to the butter/sugar mixture to give it a little extra flavor. Next time I might try using Reynolds Releas foil or spraying the foil with a non-stick spray because they seem to like to stick, but other than that, I'm not changing a thing. Thanks for sharing such a delicious recipe!

Pumpkin Cheesecake II

Reviewed: Nov. 29, 2007
Knock your socks off good! Usually I tweak a recipe, but the only thing I changed on this one was increasing the vanilla extract to 1 tsp. (I love vanilla). Wow!!! This tastes like something from a restaurant. I overbaked it, since I was more worried about underbaking it, but the cracked top is easily disguised with the delicious maple cream sauce that others have recommended (I used sliced almonds, since that's what I had). It's absolutely amazing!!

Peanut Butter Cup Cookies

Reviewed: Nov. 25, 2007
So good! Freezing the PB cups before putting them into the hot cookie dough really helped them to retain their shape. I took these to a church potluck and while there were a ton of other desserts, not one of these cookies were left at the end of the evening!

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Nov. 25, 2007
Excellent stuffing recipe! After reading other reviewers' comments about the stuffing being too dry, I added more chicken stock (didn't have any turkey stock, since the bird was still cooking) and put it in the slow cooker in the morning. I started it out on high for about an hour then turned it down to low and let it cook for about 4-5 hours (I followed the instructions for Slow Cooker Stuffing on this site), being sure to stir it at least once an hour so it wouldn't burn. Sure enough, it turned out extremely moist and flavorful, and my guests gave it rave reviews.

Pumpkin Turkey Chili

Yum! Fantastic recipe. Per previous posters' recommendations, I added black beans and added more spices (I put in an envelope of taco seasoning and some thyme and cumin, in addition to the chili powder), then served it over rice. Delicious! I can't stop eating it!!

Black Forest Cake I

Reviewed: Oct. 14, 2007
Very good! I made the cherry filling a day ahead to give it plenty of time to cool (so it wouldn't drip). I also reserved an extra 1/2 C. of cherry juice and added 2 Tbl. white sugar and a splash of amaretto to a saucepan and let it cook while the cake was baking; after the cake had baked and cooled for about 15 minutes, I split the cakes and brushed the cut sides with the cherry juice reduction. To the whipped cream, I used both vanilla and almond flavoring. Very delicious and elegant; this makes a very impressive-looking cake!

World's Best Lasagna

Reviewed: Oct. 13, 2007
SUPERB!! Try this recipe, you won't be disappointed! I've been searching for a good lasagna recipe for years and have come up disappointed, until I found this one. The only changes I made were to use brown sugar instead of white in the tomato sauce (it gives a richer flavor) and I used ALL of the sauce by adding more than called for in the layers (about 2 1/2 cups per layer) and also adding an additional layer of noodles and topping it off with the sauce. I served this at a dinner party and received rave reviews--I can't wait to make it again! Thanks for sharing your fantastic recipe, John.

Downeast Maine Pumpkin Bread

Reviewed: Oct. 2, 2007
So delicious! This recipe is fabulous--easy and very moist as well as flavorful. I topped the loaves with walnuts before putting them into the oven. I also made a praline glaze by combining 1/2 C. butter, 1 C. brown sugar in a saucepan over low-medium heat until it began to boil; after removing it from the heat, I added 1/4 tsp. cinnamon, 1/2 tsp. vanilla and about 2 Tbl. buttermilk. I poked holes into the loaves after removing them from the oven and poured the glaze over them. I'll definitely be making this recipe a lot!

Very good! I took some previous reviewers' suggestions and added some olive oil , as well as plenty of Italian herbs. I also used this recipe--without the cheese--for croutons and they were superb.
