Chicken Potato Bake

OK-so I changed this recipe a bit. I coated the chicken with mayo and then dipped in Italian bread crumbs. I then took the Italian dressing and seasoning and drizzled over entire dish, along with the parmesan cheese. I made a big mistake by adding raw green beans and baby red potatoes (I thought that covering the dish for a half hour would help cook them faster-I was wrong). Both came out only partially cooked. Next time I will boil for a few minutes before sticking in oven. The chicken came out great and so did the green beans and potatoes after a little more heating in the micro.

Hot Artichoke and Spinach Dip II

This is a great recipe, hands down one of the best Spinach Artichoke dips I ever ate. I made some adjustments along the way: I used mayo and sour cream (about a cup and a quarter of the combo...more mayo than sour cream), extra cheese within the recipe (I only added a little bit on top), I used a heavy hand when adding the garlic powder, and I only used a small amount of minced garlic. I used an entire 10oz frozen package of spinach. I did not use any other spices, not even salt. It comes out creamy and delicious!

Italian Style Meatloaf I

My husband told me that this was the best meatloaf he ever ate. Score! I changed a little bit of the recipe. First, I used Italian bread crumbs. I used a 6 cheese marinara instead of ketchup. I couldn't find my Italian blend spice, but I figured the bread crumbs would help with that. I used garlic powder instead of garlic salt. Once I had everything mixed in and pressed into the baking dish, I covered the top with more marinara sauce. About a half hour before it was done, I topped with more Mozzarella cheese. It turned out great! Next time, I will transfer from the baking dish to a serving plate so it doesn't look so bad. There was a ton of grease from the meat and cheese sitting on all sides of the baking dish. To finish off my meal, I made wide noodles with butter and parmesan.I warmed more marinara sauce to top it all. With a side of french cut green beans, this meal was top-notch without breaking the bank or the back!

Kicky Steak Strips with Rice

This recipe was pretty good, but nothing extraordinary. I tried to add more veggies for me, the veg-head, but, in the end, it reminded me of fajita filling on top of white rice. If I make again, I will make sure I have tortillas on hand :)

Chicken Noodle Casserole

This recipe turned out great! I made just a few changes. 1. I used 12 oz of extra wide noodles. 2. I used 2 cups of cheese (I didn't use low fat) within the recipe and about 1 cup to sprinkle on top. I also added a bit of bread crumbs on top. 3. I used black pepper, not white. 4. I ended up using a 9x13 casserole dish. The dish turned out delicious.I will definitely make again. There are quite a few ingredients to prepare, so next time I will not start at 8pm.lol We ended up eating a bit late.

Burrito Pie

This turned out great! I made a few changes along the way. I halved the beef (used veggie beef crumbles),used 1 small onion, used about 1 tbsp of taco seasoning on the beef, used half a bottle of taco sauce, used more than half of the lg. bottle of chunky salsa,used a ton more cheese (mexican and chihuahua cheese), used the whole can of mild chiles and less than half a can of the tomatoes. I kept the beans separate from the beef mixture. Instead of topping with beef and cheese, I topped with 3 tortillas and cheese. It was nice and crisp, giving the pie a good texture.

Slow Cooker Chicken and Dumplings

I only give this 4 stars, because I did not care for the dumplings (too doughy), but everyone else in my family liked it. I am not sure if I will make this again, but if I do, I might make the dumplings separate.

Garlic Top Sirloin Pot Roast

I have made this about 3 times now for my family. It is gone in an instant! I do not add as much onion, but I still put in quite a bit. I use baby red potatoes and bagged baby corn. This is a must in the fall and winter!

Hashbrown Casserole

I love this casserole! I make this for all the major holidays and birthdays in the fall and winter months. The only change I make is adding much more cheese. This last time, I used almost 1 lb of cheese within and on top of the casserole. Yummy!!!!

Zesty Slow Cooker Chicken Barbecue

This is a very easy and delicious recipe. I only made 3 fresh chicken breasts, adjusting the recipe as needed. Famous Dave's Rich and Sassy was my bbq sauce of choice (yummy!) I slow cooked the meal on high for the first half hour and then on low for 2 and a half hours. I took the meat out and shredded it. Then I put it back in the slow cooker for an additional hour on low. Once it was done, I added a little more bbq sauce to the mixture, since a lot of the liquid was soaked up after I shredded the meat. It turned out great! This is a must try!

Black Bean and Corn Salad

This recipe was a hit at my family reunion! Nothing was left but the cleaned out bowl. I doubled the recipe and added some fresh/chopped cilantro, some canned/diced tomato with jalapenos, and some cubed pepper jack cheese. I left out the celery. It had a little kick to it, but it was perfect! I left a bowl of scoops next to it, in case anyone wanted it as a salsa instead of a salad.

Quick and Easy Alfredo Sauce

I am very picky when it comes to alfredo sauce, but I found this one to be absolutley delicious! It just needs to be a bit thicker. In the end, my husband and I agreed that it was best homemade to date!

Best Brownies

I doubled this recipe and called it my "test" brownie batch. I think the frosting came out a bit too sweet, but other than that, they were great. Everyone at my husband's work gobbled it up in no time. Next time, even if I double the recipe, I will still only add a half of a cup of confec. sugar to the frosting. I think then it will turn out just perfect! **Also, I found that they were easier to eat the next day, after completely cooling and settling.

On Wisconsin Beer Brats

I tried this recipe for our Super Bowl party and it was a hit! The only change I made was leaving out the sauerkraut. The simmering beer and onions leaves quite a smell in your house, but the taste is well worth it!

Awesome and Easy Creamy Corn Casserole

I can't say enough about this recipe-it it always a winner! I normally double it to go into a 9 x 13 dish. I also omit the sour cream. This makes the casserole a little less pudding like, but it still turns out great!
