I heard it said best on "The Next Food Network Star." I'm a high energy, somewhat neurotic perfectionist, and the way I love best to calm down and show my friends and family how much I care is to pour myself into my food. I adore cooking for people! It's one of my favorite things to do - though my budget sometimes suffers for it, because I try to only use the freshest, cleanest ingredients, and sometimes go a little overboard!
My favorite things to cook
My husband would say my "signature dish" (as they call it on the cooking shows) is roast chicken. I've got a knack for getting it crispy on the outside, but keep the inside really tender and juicy. I've never once overcooked one! I really like to challenge myself, so I'll randomly be caught creating a Morrocan feast for friends, or searching through our local Cost Plus to find new herbs or sauces to play with.
My favorite family cooking traditions
Our family doesn't really have any traditions. I've been helping cook as long as I can remember, and I remember making dinner on my own for my family when I was about nine years old - entree, side vegetables, and dessert!
My cooking triumphs
I've got a fantastic herb garden right now, which enables me to almost exclusively use freshly cut, organically-grown herbs in all my cooking.
My cooking tragedies
Sadly, no matter how hard I try, I can't fry catfish. It's always too salty, too greasy, raw, or in pieces. This is truely tragic when you're from a small town in Texas, and your grandparents spend more time in the camper at the lake than they do in their home.
