About this Cook
I am originally from Virginia but joined the military when I was 19. Needless to say, I traveled a lot and in that time, I got to sample a lot of different types of food. My all time favorite is pretty much anything Mediterranean. I grew up cooking a lot. My mom didn't really cook so most of what I learned was from my dad. I currently have a two year old son who helps me out in the kitchen so hopefully his will stay interested and I will be able to teach him all recipes my dad taught me.

My cooking triumphs
Finding any foods that my husband and son will actually eat. They are such picky eaters it is always a triumph when I find something we all like.
My cooking tragedies
The first time I made a ham, not a precooked one, I didn't realize how long it took to cook. I started it way too late and we ended up going to Burger King that night instead. Once I accidentally grabbed nutmeg instead of cinnamon while making a batch of oatmeal cookies. Those were some very interesting oatmeal cookies.

Spinach Cheese Manicotti
I followed the directions but I used fresh garlic instead of garlic powder. The filling seemed really dry for some reason. The flavor overall was okay but not the best I have ever had. It seemed a little on the bland side.

Mom's Zucchini Bread
I have been a little timid to make any type of zucchini bread because my husband always talks about his mother's. Well, I finally gave this recipe a shot and it is a new favorite. My 2 year old son is gobbling it up too. I didn't make any changes to the recipe but I may try a touch of nutmeg or allspice next time.

Baked Spaghetti
Pretty good basic baked spaghetti recipe. People that thought it wasn't that great have to remember, people's tastes are different. Be creative and adjust things the way you like them. For instance, I added green pepper, a couple cloves of pressed garlic, some course ground black pepper, sea salt (instead of the seasoned salt), and the basic Italian seasoning while cooking the hambuer. For the cheeses, I used a mozzarella and provalone blend and shredded parmesan asiago blend. My husband and 2 year old loved it!
