Cajun Dirty Rice
I made this for our 4th of July block party and it was a huge success. I used only sausage and didn't mess with the onion. It was fabulous and easy. Great for a big crowd.

Baked Zucchini Chips
I whipped this up at the last minute using some zucchini a neighbor gave me. I used some of the extra seasonings suggested by other reviewers. Everyone loved it, even the kids. It was fast, easy and disappeared instantly. This is a keeper.

Zucchini Pineapple Loaf
I made this for a cook out. It was gone instantly. Everyone loved it. I did not alter the recipe in anyway and it came out perfect. I had to print out several copies of the recipe to give to guests.
