About this Cook
I am a mom, wife and aunt. I love to cook dinner for my family most every night (I might take a weekend day off). It might be late in the evening but we do eat together. Family is the most important thing to me!
My favorite things to cook
My favorite is my Chicken Enchilada Suizas (I have that recipe posted here). Everyone loves it so I love cooking it for my family and friends. I also love homemade chicken pot pie. I also am the one that bakes majority all the x-mas desserts for both mine and my hubby's family. Love it.
My favorite family cooking traditions
Not really a cooking tradition, but every Christmas eve I am the one that makes the santa cookies with the kids, (my daughter, nieces, nephew and the neighbor kids). I love it. One thing we always do is cook TOO much!!! Every holiday my mom says we aren't going to cook this much next year, lol. We end up finding some new recipes and cook even more.
My cooking triumphs
I don't think there is a cooking triumph. I'll have to think about that.
My cooking tragedies
Tragedies, well I am an ok cook. I like to bake from scratch. I like homemade pot pie and homemade desserts but I can not for the life of me make gravy. I can make pie crust but I can't make gravy, guess I will just have to stick to the jars (or ask my mom to stop by and make it for me).

Broccoli-Rice Side Dish
I was a little worried about this one but, it turned out great. I used 8oz of velvetta cheese instead of the jar process. I didn't use the celery (only because I don't care for it). This was a quick, easy dish to make and went over very well at Thanksgiving. I was told I might have to go home and make some more of it!

Honey Ginger Carrots
These weren't too bad. I followed everyone's suggestion on the ginger by using 1tsp. The rest of the ingredients I left the same. The amount of carrots to the sauce was great. I did steam my carrots in the microwave using one of the ziplock steam bags and that was great. I like the softer carrots and I was pressed for time so that is why I steamed. Other then that pretty good.
