Chicken Enchiladas

I've made this twice now, and my husband says it's one of his favorite meals that I make. I do tweak it a little by adding some beans, tomatoes and potatoes to the filling. I use green enchilada sauce, and I think that makes all the difference.

Vegetarian Tortilla Soup

I adore this soup!! I make a huge batch of it about every week and a half (and there's only 2 of us who eat it). I do add pinto or black beans, as well as 1/4 cup lime juice, and the latter really makes the soup exceptional. If I got this at a restaurant, I would go back again and again.

Quick Lemon Dijon Chicken

I hate to give a low rating, but this was really overpowered by the citrus and especially the mustard, and I used less of both. It wasn't horrible, but it wasn't that good, either; it just had too much of a very strong flavor. I won't be making this again.

BBQ Dry Rub

My husband could not stop raving about this rub. He loved the pants right off of it. I would give it a 4 or 4.5, just because I'm not as big a fan of the sweet taste right off the bat, but it has a nice lingering zing to it, which I like a lot.

Tortilla Soup II

This was sooo tasty. I doubled the amount of broth and added a can each of black beans and corn. I also halved the cayenne and added a total of 3 tbsp lime to it. The lime really makes this recipe, IMO.

Chicken with Garlic, Basil, and Parsley

This gets a 4.5 from me, 5 from my hub. Amazingly simple recipe, yet so tasty. I found the baking time to be right on, although I initially thought it seemed a tad on the long side. Hub was scared of it at first (he told me later), but he really enjoyed it. I paired this with the "Garlic-Shrimp Angel Hair" recipe from the site, and it was a big hit!

Garlic-Shrimp Angel Hair

My husband thought the sauce looked "snobby" when he first saw it, but boy, did he gobble it down! This pasta sauce is absolutely delicious! I'm pretty picky about giving 5's out, so you know it has to be good. I did not add shrimp, because we dislike seafood, and the sauce tasted great anyway. I paired this with the "Chicken with Garlic, Basil and Parsley" recipe from this site, and the meal was a big hit!

Cajun Pasta Fresca

I made this topped with Blackened Chicken (also on the site), and it was truly restaurant quality. I used 2 cans of diced tomatoes and the Cajun Seasoning Mix recipe from this site. Who needs a Neverending Pasta Bowl when you can make this at home??

Blackened Chicken

This was exceptional. I put the spice rub on both sides, used butter spray and cooked on the George Foreman for 3-4 min each side, then baked in the oven for about 5-6 min. They were a tad bit on the spicy side (keep your drink close at hand), but I like it that way. I served this with Cajun Pasta Fresca (also on this site), and it was restaurant quality. This recipe is definitely going in the regular rotation at our house!

Icy Banana Milkshake

I'm giving this 4 stars because it is a great base recipe, but it does need to be tweaked a bit. I used Marian R's suggestion of 1 frozen banana, 1 cup milk and 1 tbsp sugar, and that turned out very tasty!! If you like more sugar, feel free to add more, but it really doesn't need as much as the recipe calls for.

Chocolate Banana Smoothie

This was between okay and good. It's just missing a little something, and I'm not sure what. I did add more syrup and banana, as other reviewers suggested. All in all, it's not a bad way to eat a banana, but I think I'll go with an all-fruit smoothie next time.

Simply Parmesan Chicken

My husband and I both give this recipe a 4.5 rating. Very, very tasty. They were in the oven about 27 minutes or so. I just used 2 very large chicken breasts that I cut up in 5 medium-small pieces. I put more Parmesan cheese on each side a couple of minutes before taking them out. I served these with the Traditional Mashed Potatoes recipe also on this site. Yummy!

Traditional Mashed Potatoes

These are pretty good. I LOVE mashed potatoes, so you'd have to mess up a recipe pretty badly for me not to like them. Hub thinks they need some garlic. The only con that I can see is the prep time...you have to REALLY want homemade mashed potatoes. Other than that, viva this recipe! :)

Chewy Chocolate Chip Oatmeal Cookies

I don't know if I can legitimately rate these, since I didn't actually *bake* them, per se... But if the dough is any indication (which of course it is), these are very, very tasty! What can I say, I've always liked dough better than when it is cooked...and I had a cookie dough craving that I could finally indulge, since I'm not pregnant anymore! :) (and no, I didn't eat the whole thing!)

Crustless Cheese Quiche

This was just okay. I was pretty disappointed, because I had high hopes for it, but it is just missing something. I omitted the butter as another reviewer suggested, and I also added potatoes, green pepper and chicken to make it more filling. Also, I didn't really care for the biscuit mix taste...I felt like it stood out too much. But hey, more power to those who loved this dish; I'll leave the making of it to you!

Guacamole

My husband and I loved this guacamole! It was a bit sweeter than I'm used to, but I think adding some jalapeño next time will do the trick. Very, very good! We used it both as a dip and on fried cheese corn tortillas. Mmmm.

Carne Guisada III

My hub gives this a 5; I'd give it 4.5-ish. It was really good, and reminded me of my Spanish missionary days. I used it as a way to use up some leftover roasted chicken, so really it was Pollo Guisado. :) I let the chicken "cook" for 30 min, and then added the potatoes for an additional 15-20 min on low. I added cilantro as a garnish, and I thought it really added to the dish, but my husband preferred it without. Overall, this was great!

Banana Banana Bread

I have to say, it was not what we were expecting at first, but after that, the leftovers just got better and better. I think it was that I put in a little more cinnamon than I should have, so that's not the recipe's fault. I would still add 1/2 tsp cinnamon and some nutmeg and vanilla extract as well. Really good!

Clubhouse Chicken

This was super quick and easy to make. I added about 1/3 can of tomato sauce and red pepper flakes to taste. I also omitted the mushrooms (we don't like them) and onion (didn't have any). My husband pointed out that this recipe is much better over couscous than it would have been over rice. Will make again!
