Crunchy Peanut Butter Balls

My friends can't get enough of these when I make them at Christmas -- add more marshmallow if you want more balance or keep recipe proportions if you want a heavier peanut butter taste.

Red Enchilada Sauce

This is very good, and becomes AMAZING with the addition of one more ingredient... Take 2-3 dried guajillo peppers, which are smoky, not spicy. Put about a cup or so of water in a small frying pan, and rehydrate peppers at a slow boil. You should have about 1/4 of water left at the end, which can be added to the enchilada sauce. Then, scrape the meat of the peppers off their skins, and stir these in too - yummy! (And be careful, these peppers are dark red and will stain your cutting board, fingers, etc...but they are ssooooo good, and good in chili too!)

Bean 'N' Beef Crescent Pie

My BF loved this, and my coworkers couldn't get enough of what the leftovers smelled like! I found the dough a little underdone in the side with the cream cheese, so would suggest baking the dish with just the crescent rolls for a few minutes before adding the rest of the ingredients. Also, make sure the sream cheese is softened befor spreading it on. I did use almost the whole can of beans, and also topped with sour cream and black olives to serve. Delicious and easy to make.

Leftover Turkey Patties

I made a couple changes, but this is a flavorful and unique way to use up leftover turkey. First of all, I used a product called Fryin' Magic, instead of cornflakes. I spiced the recipe up by adding just a touch of chipotle to the stuffing mixture. I then made a chipotle mayo, and served the patties on French bread, instead of cooking them in the soup. Turned out great, and didn't taste at all like Thanksgiving all over again.

New Potatoes with Caper Sauce

Love these!! I quartered the potatoes and let them cook an extra minute or two, so when I mixed them with the sauce, I got just a little mash. My BF was ultra-impressed.

Cherry Snowballs

Great little, bite-sized cherry cookie treat! I reserved a small amount of the juice from the jar of cherries, and mixed it in with the milk and confectioners' sugar at the end, to give them a little pink 'shimmer.'

Corn Fritters

Light and fluffy! My whole family loved these. I added extra sugar, as suggested by other reviews. I also put the corn in my mini-food processor, and chopped it up a little, as I thought they would be better like that, than with whole kernels -- they turned out GREAT this way!

Cucumber Pan Rolls

Nice, subtle flavor, and especially yummy when warm. I brushed a bit of melted butter on top during the last few mintues of baking. I usually like a lighter, softer dinner roll though, or I'd probably rate a 5.
