Enchilada Meatballs

I make these about twice a month because it is one of the few things that my picky eaters will eat. I do not use the tomato sauce though. I add half of the enchilada sauce to my hamburger meat and use a packet of taco seasoning as well. Then I pour the rest of the enchilada sauce over the meatballs after they are done cooking and top with the rest of the shredded cheese. I usually serve this over yellow rice.

Caesar Salad Supreme

I have made this twice now - both times following the directions but w/o using anchovies. The result is great. There are a lot of calories and fat in the dressing so it isn't something that we will make frequently. But this recipe works and tastes great and we will be making this again.

Fresh Pineapple Upside Down Cake

I have made this twice now - once with fresh pineapple (using the juice from a canned pineapple) and once with canned pineapple. Both times it turned out DELICIOUS! I've not made pineapple upside down cake from scratch before so it may be that there are better recipes out there. All I can say though is that I have made this one and loved it :)

Baked Ziti III

I have made this recipe a few times now and it quickly has become a favorite. I was never a fan of baked ziti, but I am now! I think it is the sour cream that really makes a difference in this recipe. The noodles and sauce stay creamy rather than dry, and I am sure that the three cheeses adds extra flavor as well. Yum!

Balsamic Strawberries

This recipe sounded a bit adventurous so I decided to surprise my husband with a new, tasty treat for dessert. I was a bit disappointed though. I bought a nice bottle of balsamic vinegar - as other reviewers suggested, but to me the flavors didn't meld as well as I was hoping they would. I might try to make this again in the future, but it is not on my list of favorites.

Frank's® Red Hot® Buffalo Chicken Dip

My husband and I love this recipe! We use whatever ingredients we have on hand (whether it's leftover bbq chicken instead of the can chicken, or ranch dressing and feta cheese instead of blue cheese dressing and mozzarella), and it always turns out delicious.

Smashed Potatoes

I used half of the potatoes and the full amount of the herb mixture ... just to make sure there was enough of the sauce. My husband and I loved this recipe. We really like balsamic vinegar, and the herb mixture was quite tasty on the potatoes. Next time I will half the whole recipe, as we didn't need so much of the sauce, but we will definitely make this again!

Peanut Blossoms II

I've never made these before (so I don't have a recipe to compare this to), but they turned out great and were a big hit. I did half the recipe (because I didn't need so many of one type of cookie) and used half butter/half shortening. They turned out perfectly - my cookies didn't crack after putting the Hershey Kiss in, and the cookies stayed soft even after they cooled. I will be using this recipe again in the future.

Sweet, Sticky and Spicy Chicken

Made this for the first time this week, and the whole family enjoyed it. I doubled the sauce since I was adding broccoli - and it tends to soak up sauce. I did not double the ginger or the hot sauce - I didn't want it to be too spicy for the kids, but followed the recipe for everything else. Next time I will probably toss the chicken in some corn starch before cooking, as the sauce never thickened. Otherwise, this is a good recipe. We will make this one again!

Jen's Heavenly Egg Salad

Having never had egg salad sandwiches before, I cannot compare this recipe to anything else, but can say that I enjoyed it. I added maybe 1/2 tsp more of the mustard, used pickle juice instead of lemon juice since that is what we had on hand, and I don't care for onions so I omitted them. I would definitely make this egg salad again though - again with a smidge more mustard and with the pickle juice. Thanks for sharing!

Curried Chicken Rice Soup

I did alter this recipe based on what we had on hand - so while I cannot say that I give it 4 stars based on the recipe as it is written, I can say that we made it using the ingredients that other reviewers suggested and it was Great! I used a can of cream of celery and a can of cream of chicken soup, along with one can filled with milk - in substitution of the evaporated milk that we did not have. I didn't have a lot of carrots so I added some frozen peas towards the end of cooking. We had leftover yellow rice - which I added just a bit more than the 2 cups called for, and I used closer to 2 tsp of curry powder, per our taste. This soup was delicious! I've never had anything like this before. We loved it and will definitely be making it again!

Too Much Chocolate Cake

YUM! Just made this cake for the first time yesterday and it turned out fantastic! I followed the recipe as written - but had to bake it in two round pans as I do not have a bundt pan. I followed another reviewer's tip of lightly coating the chocolate chips in flour, and they stayed put perfectly in the cake. I also made some glaze for the cake to put between the layers, however the cake is so great the way it is, that it does not need any icing. Thank you so much for sharing this recipe!

Peanut Butter Glaze

I only give this 3 stars because when you follow the recipe as written, it is way too thick to drizzle, and the recipe needs to be adjusted. However, I love the concept of it! I added more water to thin it out, and more peanut butter to give it more peanut butter flavor - and it was the perfect thing to drizzle over our chocolate cake!! YUM!!

Banana Pudding IV

My family loves this recipe! I usually just use two bananas, but other than that follow the recipe as is and it is great. It is quite rich so beware of that, but this is my favorite Banana Pudding recipe I have tried.

We have made this countless times and everyone always loves it! I don't always use all of the fruit that it calls for, and I tend to skip the sugar but instead add Sprite - though I have followed the recipe to the letter, and it is great either way - just personal preference on taste. Definitely a keeper!

Beef and Bean Chimichangas

We thought these were great - even as leftovers. They didn't get as crisp on the outside as I expected, and if you cook them too long, the burritos will start to split. But, we loved the way they tasted and how easy they are to make. Will definitely make these again!

Pork Marsala

I just made this the other night and not only did my husband and I enjoy it (minus the mushrooms since we don't care for them), but the kids even ate it. The pork chops I used were thin cut so we didn't need to pound them any, but they came out tender and flavorful.
