Super Moist Pumpkin Bread

I did not like how the coconut milk tasted with pumpkin, I prefer the Downeast Maine Pumpkin Bread recipe - it's just a moist.

Pumpkin Pancakes

Just made the pancakes, and served with cinnamon applesauce instead of the syrup. Used a boxed multigrain pancake mix I had on hand, so for dry ingredients I just added some sugar and cinnamon. Also mixed the wet ingredients in a blender to get them super-fluffy. Awesome! Light and fluffy, delicious. I'll keep this recipe around for awhile!

Absolute Mexican Cornbread

I halved the amount of butter and sugar, and it turned out perfect! Moist and delicious, could possibly cut down on the butter even more. Made it in muffin tins. I have gone through a lot of dry-tasting cornbread, but will keep this as my cornbread recipe from now on!

A Pad Thai Worth Making

Loved it! Very happy to have a recipe for pad thai to make at home. I cut way down on the oil, which worked out fine, and used just 1 T of sriracha - I can't imagine how spicy it would be with more! Also didn't have any fish sauce, but just increased the oyster sauce and added some soy. Also didn't have (many other things), but put in diced tofu instead of shrimp. Tailor the recipe to your liking!

Curried Apple and Leek Soup

Love it - easy, super-healthy, and filling. Followed the recipe exactly and it was just perfect. The apple flavor doesn't come through, but that's not a problem, it adds a nice texture to the soup and that's what the most important. I used a little more potato than it called for, to make it thicker. Thanks for the recipe! I will make this many more times!

Lower Fat Banana Bread II

Cut the sugar in half? YES. I cut it to 1/2 c. but it was still super-sweet. Make it 1/3 c., and use 3 smashed ripe bananas. I also used half whole-wheat flour, and sprinkled in some flax seeds for a nutty texture and omega-3's. Also cut down the vanilla to 1 t, since 1 T seemed excessive, and tossed in 1 t of cinnamon. Except for being way too sweet, I would use this recipe again.

Blueberry Muffins II

I also substituted applesauce for all of the butter, decreased the sugar a bit accordingly, and used whole-wheat flour instead of white. They only need about 20 minutes in the oven, 30 minutes is overkill unless you have monstrously sized muffin tins. They were healthy and moist, turned out quite nicely!

Mom's Applesauce Pancakes

I used a multigrain pancake mix and soy milk instead of dairy. Also omitted the lemon juice since I didn't have any. Otherwise I kept the proportions the same and liked the thickness of the batter, the pancakes cooked quickly, all the way through, and very evenly. What more can I ask? Expected these to be kind of flat with the applesauce, but much to my delight they were actually MORE fluffy and scrumptious than with the recipe on the box! Not very sweet or applesauce-tasting though, you still need to pour on the syrup. Make sure you don't over-stir, as that will take away your "fluff." I enjoyed this version more than the box recipe though and this is a keeper.

Slow-Cooker Chicken Tortilla Soup

A little hint on the chicken broth/water issue - just cook your chicken in 4-5 cups of salted water. Use the flavored water instead of chicken broth + water, as the recipe calls for!

World's Best Scones! From Scotland to the Savoy to the U.S.

I was not terribly impressed. The scones from the bakery down the street were far superior than my fresh-baked ones from this recipe, so not worth the trouble. Also the scones got hard very quickly, but the next day they are inedible.

Roasted Sweet Potatoes & Onions

Flourless Chocolate Cake I

WOW. Not too hard to make and was fantastic! I made it in a cupcake tray, same cooking time, and it turned out great. Also mixed in a few tablespoons of peanut butter which added a gret kick and it still set well. Substituted margarine also for some lactose-intolerant eaters, and it was still fabulous!
