Chicken Fajita Melts

Everyone ate it but only my husband and I really liked it. The kids were luke warm to it. But my pickiest eater still ate it and normally if something is bad he would rather not eat at all.

Bubble Pizza

I call this "pizza you can eat with a spoon". it was surprisingly good. I didn't use ground beef. I used sausage and mushrooms instead. I sauted the mushrooms a little before putting them on the pizza. I also had to doctor up the pizza sauce but that is personal preference. Everyone liked it so much that there was none left. I will make it again. Next time I will add different toppings.

Strawberry Cheesecake Quesadillas

I admit I completely changed this recipe but I'm giving it a 5 because it was a great imitation of a similar crepe recipe I have and now I can cut out making the crepes! Instead of putting the jam and cheese in the quesadilla, I took the cream cheese (softened) and added some sugar and vanilla. I mixed it all up. Then I smeared some of the mixture on one half of the tortilla to about 1/4 or 1/2 an ince from the edge. Then I sealed the edges. Warmed the tortilla on both sides in a hot skillet. I removed the tortilla and then spooned strawberry preserves on top. Eat it with a spoon or fork. It was delicious!

Colleen's Slow Cooker Jambalaya

Marvelous! I took the advice of others and left out the cayenne pepper altogether. Good thing I did. Then I used 1 teaspoon of Cajun seasoning and 1 teaspoon of Old Bay. It was just right! I also decided to brown the chicken and sausage before adding it to the pot. This was so good I think I'll make it for my next party.

Blueberry Buckle

This was great. I made all the changes suggested (adding a little more milk and a teaspoon of vanilla). But for the topping, I used HARD butter instead of the soft butter the recipe calls for. I mashed everything together with a pastry blender then sprinkled it on top of the batter in the baking dish. Hard butter is necessary to make the topping crumbly--otherwise you'll end up with something like the consistency of icing for the topping. Also, my husband made this a second time using 1/3 cup of cranberries and the rest blueberries. Not enough cranberries to overpower the blueberries but enough to give it an occasional tartness that added to the flavor. It was delicious!

Land of Nod Cinnamon Buns

Yummy! However, I'm not sure why some thought these were too sweet. I didn't use raisins so that might be partly why I didn't get that overwhelmingly sweet taste. I cut down on the sugar and added more butter but wished I had more of the topping so next time I will add all the sugar and add a little more butter. The good thing about the topping is that it runs off when you turn the buns out of the pan, then you can just pour as much of that mixture as you like back onto the buns. I did use the icing recipe from the "Clone of a Cinnabon" recipe from this site. For that I would add a little more milk so that it doesn't get stiff like cake icing. Then I was trying to get the same taste as the Caramel Pecanbon from Cinnabon, so after I put the white icing on, I drizzled a little caramel over that and topped with pecans. It was too good to be so easy! This would make a great addition to a brunch menu. However, I'll probably cut the recipe in half when I make it just for my family as it made quite a bit.

Polvorones de Canele (Cinnamon Cookies)

These tasted just like the ones I had at a party this weekend. I wanted more of a shortbread taste and less cinnamon so I didn't add cinnamon to the mixture you roll the cookies in. It was perfect! The ones I ate at the party were little round balls. I wonder how she got them to stay round?

Gary's Stuffed Mushrooms

I was a little skeptical about all the cream cheese and it did turn out to be a little overwhelming to me. I cut the butter in half. The next time I may cut out some of the cream cheese as well. My husband loved them though. He ate the rest of the stuffing mixture with the scoops tortilla chips. My 4 year-old liked them too.

Easy Guacamole

I gave this a four because I'm grateful that it was so easy and the ingredients are all there to make perfect guacamole! I would have given it a five but I had to change a few things. I used 4 avocados and only 1/4 of an onion. I also only used 1/2 a lime and only one slice of tomato chopped. It's a good thing I doubled the avocado. I tasted so much while I was cooking that it would have been gone!

Sweet Corn Cake

I'm giving this 5 stars because it did come out exactly like it was supposed to. However, the texture of the corn meal was a bit too much for me. I prefer a smoother taste and am looking for a recipe just like this without the corn meal. I guess it's a southern style corn spoonbread.

Restaurant Style Chicken Nachos

Funnel Cakes IV

I absolutely loved this! It tasted just like the funnel cakes at the amusement parks. I only gave it a 4 because I had to alter the recipe by adding less flour (about 1/2 cup) and more milk (a little more than a 1/3 cup). I also added a little more sugar and some vanilla extract. It was delicious! A measuring cup works great if you don't have a funnel.

Tres Leches Cake

For the life of me I couldn't figure out what was missing from this cake. Then I realized it's missing butter. This cake was more spongy than the traditional tres leches cakes I've tasted. Tres Leches is supposed to be dense--sort of like pound cake. This cake was very porous. I also think that more of the milk mixture needs to be poured over the cake. It's not supposed to be soggy as some people have mentioned. Though it's a lot of milk, it should absorb nicely into the cake and there really shouldn't be any traces of the milk on the cake plate. I'm going to have to keep searching.

Mexican Casserole

Wow! This was great! If I could give it 6 stars I would. I wish there had been leftovers so I could eat it again tonight. Don't know what ranch style beans are so I used some black beans I had leftover in the refrigerator. I used flour tortillas instead of corn. I also used a mexican blend of shredded cheese instead of just cheddar and put cheese in between the layers. I'm definitely making this again. My husband ate his with green salsa and loved it.
