This is a nice change from regular pancakes. For me, however, something was missing. I am going to have to play with this recipe a bit. But overall, a good pancake recipe.

Country Apple Dumplings

This recipe is easy and delicious. The only change I made was to use diet Mountain Dew. One suggestion I have is to roll out the dough triangles to make them a bit wider. This made it much easier to wrap and encase the apple slice.

Chocolate Pound Cake III

This cake is wonderful. The only change I made was to substitute 4 oz. melted baker's chocolate for the coffee (I don't like the flavor of coffee in my chocolate cakes). Please note that the flavor and texture of this cake changes (for the better) overnight, so plan on making this a day before it is actually needed. I only gave it four stars because the texture of the cake, while moist and great, is not what I would consider the texture of a true pound cake to be.

German Chocolate Cake III

I made this for a friend's birthday. It was a huge hit. The cake is moist, but not too sweet. I'm not a fan of coconut, but I have to say I enjoyed the cake. I will be making this again.

Dutch Babies II

I really like this recipe. It is a cross between a crepe and a pancake. It is fun to make as well. The first time I made it, I followed the recipe as written. I found it a bit bland, hence the 4 star rating. I now make it with sugar and vanilla added. With these additions, the recipe rates 5 stars. I serve with maple syrup. Just a note: I followed another reviewer's tip to use a regular oven, not a convection oven. This is so true. Twice now I have forgotten to turn off the convection feature on my oven, and both those times, the pancake did not rise and was literally "flat as a pancake".

New York Cheesecake III

I live in a NY suburb and was looking for a NY cheesecake recipe. I have tried a few from this site, and this one is the best so far. I gave it 4 stars because I do not like my cheesecakes with ANY crust at all. I feel that any crust takes away from the flavor of the cake. I made the cake as written omitting the crust altogether. Prepared that way, the cake is 5 stars.

Chocolate Brittle Surprise

This recipe is fantastic!!! It's quick, easy, and uses ingredients that I usually have in my kitchen. No shopping necessary! I was skeptical about how it would taste, but it was absolutely delicious!! I used salted saltines and topped with chopped almonds. It may use cheap ingredients, but it is definitely fancy in flavor. Everyone loves it and wants the recipe! Keep your eye on it while baking, though. Mine was done in only 8-10 minutes.

Shrimp and Feta Cheese Pasta

This is a good basic recipe that rates 3 stars. It can very easily be made to rate 5 stars. I found the recipe as written to be a little lacking in flavor, and there wasn't enough "sauce". I made it again using 1/2 c. white wine, fresh basil, spinach, 4 fresh tomatoes and some red pepper flakes for a little "kick".

This was good, but way too much bread crumbs. Next time I will reduce the bread crumbs by about half. I also left the clams whole and topped with bread crumb mixture as a true Clams Casino should be.

Strawberry Torte

This dessert is easy, looks amazing and tastes great. I gave it 4 stars instead of 5 because I cannot stand using frozen strawberries for garnish!!! PLEASE, do yourself a favor and garnish this with fresh strawberries. So you don't waste the frozen strawberries, cook them with the glaze and increase the cornstarch to 1 1/2 Tbs. Another reviewer mashed the strawberries before cooking, but that is not necessary. The strawberries will break apart during cooking. The result is a glaze with strawberry pieces throughout giving it texture (if you are looking for a smooth glaze, this is not for you). If you use unsweetened frozen strawberries, I suggest you add sugar to the glaze during cooking. With these modifications, this is definately a 5 star dessert!!

Slow Cooked Corned Beef for Sandwiches

I am reviewing this item for my son, who grew up in the suburbs of NYC and moved to Atlanta. One of the foods he missess dearly is a good NYC deli corned beef sandwich. I came upon this recipe and emailed it to him. He made it the very next day and called me to tell me it is by far the best corned beef he has ever had. He made it again and brought it to work. It was a gigantic hit. Just a little note: He used Guiness for the beer.

Whipped Cream Cream Cheese Frosting

As written, I gave this recipe four stars because I found it to be too sweet. I now use between 1/2 cup sugar to 3/4 cup sugar depending on the sweetness level of the item I am frosting. With the adjustment of the sugar, the recipe is five stars. I use it all the time.

Frosted Banana Bars

I made the bars as written, but used the Whipped Cream Cream Cheese frosting from this site instead of canned frosting. The bars were good but something was definately missing. I sprinkled chopped walnuts over the icing, and what a difference! Next time I will add the walnuts to the cake batter. With the addition of the walnuts, this recipe is a 5. I also found that the bars tasted even better the next day.
