All I can say is, WOW! My husband is a really big fan of carrot cake and I just sort of liked it. Well, not anymore!! This cake is fantastic! I did make a few small changes. I added a teaspoon of nutmeg. Then I only used 1 cup of oil. For the frosting, I only used 3 1/2 cups of powdered sugar. But without the changes, it still would have been great. Very easy to make, also! Thanks for the recipe!
