Spinach and Mushroom Frittata
This one is so delicious! My family loved it. I also sauteed the onions and mushrooms ahead of time. we kept the leftovers in the freezer, but even those went quickly. Thank you for putting this one out there.

Fabulous Cilantro Pesto
Pretty good. I also subbed pine nuts for the kind called for. Next time I will use lime juice instead of vinegar. Otherwise, somewhat bland. Maybe I needed to add salt or something.

Mexican Chicken and Tomatillo Stew
This soup was SO GOOD. We had it as our meal tonight and used leftovers from a whole chicken we cooked last week, instead of chicken breast. I have never cooked with some of these items before, but found this soup to be surprisingly delicious. I need to make some and put it in the freezer for winter time.
