Amatriciana
Really easy and delicious. I boosted the bacon, garlic and basil measures a bit and served tossed with Bucatini

Awesome Baked Sea Scallops
Vey good recipie... Served to my mom who really doen't care for scallops much but liked these. recipie scales well. My only changes were sprinkle a little paprika on top and, since I used frozen scallops, to soak the scallops in 50/50 water and skim milk to thaw them.(this works great on any frozen seafood to remove "fishiness"... rinse and pat them dry before proceeding) What impressed me most about the recipe is that even with strong seasonings the scallops retained thier delecate taste. Cheers!

Salmon in Oyster Sauce
I tried this and found it very bland and unremarkable with needless post prep. I was astonished they didn't publish my version which is: Forget the water and garlic it just makes it bitter overall. Add 1/2 cup of your favorite mushrooms raw, soaked dry or prepared chopped and thicken in small sauce pan. Rest all sauce ingredients 15-20 minutes pour over the fresh salmon on a greased pan or sheet and broil about 7 minutes. Serve with yellow rice and steamed veggies. Tell me if it ain't alot better
