Whoopie Pies

Mine came out really pretty, although they were huge. My fault though, I used a larger scoop. They were a big hit at the party I brought them too. The filling was very light and tasty. I read an article that said "The Whoopie Pie is the new cupcake for trendy foods". Will try them again with a smaller scoop.

Quick Yeast Rolls

I whipped these up as a last minute addition to a large sunday dinner. They were really good!! I like my rolls a bit smoother in texture, but these really hit the spot and were a huge hit. I might have baked them a little too long - hence the texture issues. Will definitely make these again though!!

Across the Border Tequila Shrimp

Yum! Perfect for a very quick dinner during the week! We live on the Texas Gulf Coast and always have tons of shrimp on hand. This recipe was a great way to use some of it up. I especially like how easy this recipe is to tweak and it still comes out delicious.

Amish Meatloaf

This recipe is a good change to regular meatloaf. I didn't have any crackers on hand, so I used bread crumbs. I think I needed more because the meatloaf was a little soggy, but the flavor of the sauce more than made up it! This is perfect for a weeknight dinner when you need something that is quick and easy.

Magic Cookie Bars II

Easy to make! I'm not a fan of coconut, but kept it in anyways. The flavors of the chocolate and butterscotch were perfect and the coconut (I used unsweetened based on another reviewer) helped counteract the sweetness of the cookie.
