Portobello Mushroom Burgers
This was wonderful. The marianade had just the right amount of flavor. I substitued lowfat feta cheese for the provolone and added sun dried tomatoes. I cooked it smooth side up first so that when I flipped it, the mushroom had a perfect cup to contain the cheese and tomatoes. Delicious!

Zucchini Patties
I made these last summer and my family LOVED them. This year my husband is working for the local radio station. The station manager always has an over abundance of zucchini so he brought some home with the request, "Can you make Zucchini Patties for the station?" So this morning I did. They couldn't stop raving about them on the air. They were even eating and talking at the same time. The recipe has been requested by many. Thank you so much for a wonderful recipe.

Mango Salsa
Wow!! What a great recipe. I added a pinch of kosher salt and subbed walla walla sweet onions for the green onions. I also seeded the jalapeno so it wouldn't be too spicy. DELICIOUS! I served it with fish along with the white sauce from the "Lime Fish Tacos" on this website. Wonderful combination. At the end of dinner, we were putting the salsa, white sauce and fish on tortilla chips. Excellent appetizer idea. My husband who was a little apprehensive about a fruit salsa in fish tacos had TWO tacos!! This is our new favorite way to eat fish.
