Cream of Pumpkin Soup

This soup had very good flavor, but was very salty. Next time I will use either low-sodium chicken broth or 1/2 the salt. Otherwise, I loved the flavor of the soup and the croutons together!

Cincinnati Chili I

This was really good, I have never had Skyline before but was told about it by a friend from Cincy. We had it "4-way" style (cheese & fresh chopped onions) and DH said he likes it better than regular spaghetti sauce! The spices are a welcome change from traditional Texas style chili. The flavors went really well with the cheddar cheese. The only thng I did differently was that I sauteed the onions in the bottom of the stock pot, then added the broth, brought it to a boil, added the meat, and then when it was browned, added the rest of the ingredients. Yum!

Four Cheese Macaroni

When I made this I took the other reviewer's advice and doubled the cheese (except the cheese food) and half & half, I left the eggs in though. I can see how, as written, this recipe would be a disaster. I gave it three stars as it was a good starting point. With the egg, it was very casserole like, and not very creamy. The taste was good, but I've had better. Next time I will further follow the advice of others and leave out the eggs, and also double the cheese food. It was my first time making homemade mac & cheese, so it was a good learning process.

Bow Ties with Sausage, Tomatoes and Cream

We all really loved this recipe, I have made it twice now and it is super easy to put together. It is now in my top 5 favorite recipes from AR. It is pretty rich and flavorful, a VERY welcome change from straight up tomato or cream sauces. It's the best of both worlds! It would be good with just about any kind of sausage.

Buttery Soft Pretzels

This a recipe I am definately keeping on file. I love sweet and salty, and this is yet another great recipe to indulge that craving! I served them with cheese sauce at a family game of Texas Hold 'Em and all 12 were GONE in an hour. They were very easy. The only change I made, due to the urging of other reviewers, was that I cut the flour down to 4.5 cups. I did the dough in the bread machine which made it even easier. I did the water/yeast/sugar step first right in the bread machine pan, then added the rest of the wet ingredients, then the dry. When the dough cycle was done, it was perfect...non-sticky dough that I barely had to flour my surface at all to work with. I was skeptical of the baking soda dip, because I have always seen them done with an egg wash...but it was so good, made the outsides nice and brown and "cracked" like real pretzels. Sprinkled on some sea salt and baked them on a parchment lined pan and they were perfect! Soft, chewy, and a little bit sweet...YUM!

Mini Southwestern Corn Pup Muffins with Fiesta Dipping Sauce

These are a definate make again. DH and I both ate a bunch of them, but the toddler just picked out the hot dog and ate that. So the spices make these suitable for the more "refined" palettes in the household, hahaha. The dipping sauce got bettr and better the longer it sat in the fridge (I think it took sometime for the flavors to meld), so my suggestion would be to make the sauce 1/2 a day before the muffins and let it sit (covered) in the fridge until serving time. -Diana

Fluffy Peanut Butter Frosting

Great multi-purpose frosting. Worked well for piping too. Had some left over, chilled it rolled it into balls and dipped in melted chocolate. You have to keep them in the fridge but they are incredible.

Chip Chicken Lollipops

This is GREAT to make on a large scale for appetizers...everyojne is always so intrigued at how they're made and they taste great w/ very little effort. I love that they can be served with almost any dip.

Finger Lickin' Rock and Roll Artichokes

This was really good. I did what many reviewers suggested: used a clove of fresh garlic instead of powder and cut back on the amounts of the salty ingredients. I also upped the amount of artichoke hearts to 14 oz to make it chunkier (and because that is the size can I had, lol). The idea of the recipe and the combo of ingredients are perfect, the spicyness really sets it apart from other artichoke dips. I served it for dipping with Chip Chicken Lollipops from this site.

Ratatouille

This was a very flavorful and pleasant way to eat veggies. This recipe could use just a tad more seasoning, maybe a little black pepper and dried basil (Which i added to the tomato layer). We enjoyed it over pasta.

Spinach Cheddar Muffins

Unfortunately, our household didn't like these too much. Hubby and I are both indfifferent to spinach so didn't know what to expect...but they were pretty bland and the taste of the spinach did over power even the cheese (we let them cool completely as the recipe seems to suggest). I gave it two stars, one because they are REALLY pretty, and one for the benefit of the doubt (maybe it was just our tastes and not the recipe). It was an interesting N*R (not reviewed) selection to try though! N*R

Picadillo (Cuban Beef Hash)

This N*R choice was pretty good. The only change I made was to omit the garlic salt and double the garlic powder like someone else suggested. It was still very salty! We ate it over rice which helped a little with the saltiness. We also thought it was begging for some heat...but don't know how "authentic" Cuban that would make it. I think this would be better with the omission of the garlic salt, half the olive brine to make it less salty. I made the whole recipe and it makes ALOT so would be a very good recipe for a potluck or to freeze for quick meals. N*R

Orange Glazed Carrots

The taste pf these ingredients together was really good, however, I gave four stars because after reading many reviews I decided to preapre them a little differently than the recipe states. I cooked the carrots in one pan and then added the ingredients for the sauce to another and whisked in 2 tsp. of cornstarch and brought it a boil. It made the perfect glaze that I then just poured over the cooked carrots. That seemed to work to solve the problem with the glaze that many others reported.

Baked Coconut Chicken

We thought this was really good. After Hubby wrapped his head around the idea that it was chicken *AND* coconut together in the same recipe he thought it was really good and ate two pieces. The only change I made was salting the chicken before marinating it in the coconut milk. This is a good recipe if you are looking for a "different" way to have chicken! N*R

Fluffy French Toast

This was an awesome french toast. The vanilla really added a great flavor. I wish the cinnamon flavor was more intense so I will follow another reviewer's advice next time and spinkle each piece with cinnamon. I made it with homemade honey wheat bread and real maple syrup and it was amazing!

Chicken Enchiladas I

Hubby and I thought these were really good. I made them using homemade tortillas (Tortillas I) so these were nice and hearty. I didn't read many of the reviews before beginning (I know, I know...) so I missed out on the part about the sauce being too runny. Next time I will just omit the 1/2 cup of water and add an extra chicken breast. It was still delicious, I mean you have to eat enchiladas with a fork anyway, right? I unexpectedly ran out of onions so I added 2 tsp. of oinion powder to the sour cream part of the sauce, and I added 1 tsp. of hot chili sauce and an extra clove of garlic to the tomato sauce, nothing major. This will be our enchilada recipe from now on!

Irish Boiled Dinner (Corned Beef)

This is a family favorite. I have made it several years in row for St. Patrick's day. The only changes I make to this recipe is adding 2 tsp. each of pickling spice and ground mustard. I also add 4-6 cloves of garlic peeled & halved with the meat and onions in the beginning. When taking the onions out the cut up be careful! They are filled with boiling water!
