Cheesy Corned Beef Hash Casserole
Great flavor! It's a keeper. The only thing I didn't like is the velveeta on the top. I will incorporate cheddar cheese into the dish itself next time I make it.

Chicken Enchiladas II
Great flavor! I will make it again. The only thing I had to do differently was dip the tortillas into liquid to keep them from cracking when rolled. I used hot chicken broth.

Black Beans
Beans that are salted during the cooking process become tough. . .that's what happened here. They never did soften even after hours of cooking. . .and cooking. . .and cooking. Taste was marginal.
