Cafeteria Carrot Souffle

I made this recipe to have as dessert and can't stop eating it! Sooo good. I used my food processor to slice the carrots and then cooked them in the microwave with a little water. I just kept testing them every 3 min or so till they were very tender. Then put them back in the processor with the melted butter and sugar, till the mixture was very smooth. I added 1 tsp. of pumpkin pie spice and used 1/2c brown sugar and almost 1/2c white, which does not make it too sweet for a dessert. Frankly I didn't think it was too sweet even for a side dish. I also baked it for 1 hour.

Best Cream Of Broccoli Soup

I love how this broccoli soup doesn't use cheese! I did not add any celery, and took the advice of others and simply mashed it so it stayed chunky. Delicious!!

Apple Crisp II

This is so good! I had 7 golden delicious apples to use up so that's the amount I put in a 7x11 pan. I used brown sugar in the syrup instead of white, and added cinnamon. After mixing the apples with the syrup, I put them right in the greased pan and put all of the crisp portion on top. I used a full cup of oatmeal. Perfect amount of crunch.

My Favorite Sesame Noodles

Tasty recipe. Very similar to a Rachel Ray recipe which adds thinly sliced fresh spinach and sliced rotisserie chicken. Makes it even better!

Favorite Old Fashioned Gingerbread

Really, really liked this. Took the advice of several reviewers and doubled the spices, seemed to be the perfect amount. Cooked it in a bundt pan and was done at 43 min.

Best Brownies

These are so yummy. I doubled the recipe for a 13x9 pan, but only used 3 eggs and added almost a whole cup of the cocoa powder. Cooked them for 30 min. and did not frost them. Fudgy and delicious!

Oregon Salmon Patties

These were really good. I sauteed garlic and finely chopped bell pepper along with the onion. I did not have parsley, but I added a little dry dill, sea salt, (salmon I bought was unsalted) and I used aioli garlic mustard sauce (from TJ's) as I did not have dry mustard either; did not add any of the reserved liquid because they were plenty moist. Cooked them in olive oil instead of shortening...whole family loved em!

Applesauce Bars

Very yummy and super easy. My 13 year old son put the batter together in about 5 min. Baked this in an 8x8 pan for 30 min and it was perfect. Used 3/4 whole wheat pastry flour and 1/4 white. While it baked, I beat together butter, cream cheese, pwd. sugar, and vanilla to taste, and spread it on as soon as the bars came out of the oven to make more of a glaze. Delicious!

Sweet Potato Bread I

This is the second time I've made this bread. 5 * for the taste, but I did change it a little. Used 1/2 white flour and 1/2 whole wheat pastry flour, 1/2 oil and 1/2 applesauce, 1/2 white sugar and 1/2 brown, and doubled the spices. Even better than the first loaf. Love this bread. I think it's better than the pumpkin bread I usually make.

Classy Green Bean Casserole

I've only made this recipe when I'm cooking for alot of people. I've found that you can use 5-6 cans of the green beans and keep all of the other ingredients the same; it tastes great and makes it less runny.

Chicken Marsala

The whole family loves this recipe. After I've used the flour mixture on the chicken, I add the mushrooms to the little bit that's left in the dish, stir to coat them, and then scrape it all into the pan when it's time to add it. I think it makes the "gravy" a little thicker. Also I only use 3TBS of the butter/olive oil.

Classic Tossed Salad

I have made this salad about 15 times now and everyone always LOVES it. I do not use any sesame seeds and only about 1/2 the olives. If you use bagged lettuce it is super quick to prepare. Kraft makes a dressing called "Zesty Italian" that tastes perfect with it. Not sure why the recipe states an 8oz bottle of dressing. Just dress it to taste; that ends up being nowhere near 8oz.

These cookies are the consistancy of muffins or quick bread, but boy are they good! I did not make the icing for them, and I can't imagine they would taste better with it.

Mayonnaise Biscuits

These are very good. Very light and fluffy. If the batter is runny or they don't rise, the batter has been mixed too much! I used a rubber spatula and gently folded ingredients till just combined.

I added the whole can of condensed milk but still felt it should be sweeter. I didn't have any marshmallows; I suppose this would have helped with the sweetness!

Creamy Blueberry Pie

I served this at a family gathering and everyone loved it. I used frozen wild blueberries (these are the small ones), which I thawed. I love how it stays together instead of spreading across the plate like so many other blueberry pies!

Vegetable Chowder

I love this chowder. The first time I made it I followed the exact recipe, but now instead of cutting up vegetables I use different Trader Joe organic frozen veggies-whatever combo I have-even asparagus. I only use 2 cups of cheese.
