Enchilada Casserole III
Great recipe - very, very kid-friendly. The only thing that makes it a little bit easier is to use canned enchilada sauce, rather than mixing up your own. I did the recipe both ways, and found it was easier to skip that one step. You tend to need at least 3 cans (10 oz) of the sauce as it is very thin.

Sourdough Chipotle Chicken Panini
My family absolutely LOVES this recipe. Go easy on the chipotle chili powder to make it more mild. You can also use ranch dressing rather than caesar if your kids don't like caesar. This is such an easy leftover chicken recipe.

Sugar Cookie Glaze
LOVE, LOVE, LOVE this frosting. It is exactly what I was looking for. Very easy to use and dries extremely well. You can even stack your cookies. This opens up a whole new world of baking for me. Thanks.
