Chicken Caesar Pasta
My entire family enjoyed this meal. I too made a couple of miner changes. I used a Lite dressing and only used about 1/3 of what it called for. My husband tends to like a lot of sauce/dressing so he simply added a bit more to his individual serving. I also sauted some onion and garlic before adding the chicken. About 2 minutes before the chicken was done I added some baby squash to boost up the veggie content. Oh yeah, whole grain pasta in place of the regular stuff. Yum!

White Chili II
I really liked this recipe. I had to make modifications because I didn't have all the ingredients. I scaled down the recipe to 6 servings and used 2 15 oz. cans of black beans and 1 20 oz. can of cannelinni beans. I also added about 1/2 cup of corn. I didn't have left over chicken so I cut up some chicken in cubes, seasoned it with cumin, cayenne, oregeno and lightly browned it. Then I set it aside and poured some of the chicken broth on it to soak in while preparing the balance of the recipe. I took heed and also mashed up about 3/4 cup of the beans to thicken. Yummmmm!

Veggie Soup with Basil Sauce
Loved this recipe. I didn't have tomato puree on hand so I used tomato sauce and thickened it with a bit of corn starch. VERY EASY! Served with garlic bread and this was a filling meal. Thanks for the great recipe.
