Chicken Wild Rice Soup I

Maybe the best soup I've ever made. I had to make a few changes to the recipe, no carrots so I used a potato, hot Dijon mustard instead of dry mustard and no sherry or almonds. I used an "old world pilaf" (mixture of rices and dried beans) I found in the bulk food section at the grocery store instead of wild rice. The addition of curry is awesome in the soup.

Pecan Sandies

I used butter instead of margarine and didn't roll the cookies in sugar as the recipe recommended. I placed a pecan half in the middle of each cookie before baking. I thought these were great, although they cooked quickly, I turned the oven down to 350 degrees and baking for 10 minutes was perfect.

Peanut Butter Cup Cookies

I followed the advice of other reviewers and froze the PB cups before sticking them into the cookies, I also cooled the finished cookies in the refrigerator after they were done baking, 8 minutes was perfect.

Beef and Bean Chimichangas

I'd recommend using the seasoning in the recipe rather than a store bought taco seasoning, its so much better! Be careful not to put too much refried beans on the tortillas, I went a little overboard and ended up with beans shooting out of the chimichangas.

Red Potato Soup

I used yellow potatoes instead of red, no celery seed so I used celery salt and added in one chopped stalk of celery. Simple, easy to make and tasty.

Spiced Apple Cider

Served it at our Halloween party and it seemed to go over well. I had people add their own shots of rum since I wanted to have some too. It was strongly spiced, the cinnamon was pretty powerful, I'm not sure what it was but something seemed like too much, I think it was the addition of the allspice, maybe try it again and leave it out. Overall people seemed to like it, a few people came up to me and said it was really tasty.

Broccoli, Leek, and Potato Soup

Used all ingredients listed in recipe, I pureed about half of the soup and left the other half chunky. I found the flavor to be a little lacking, had to add a little extra salt.

Great cookies, they were tasty and looked awesome. My only complaint was that they were a little too big, I'll try the recipe again making the cookies smaller. I baked 2 batches at the recommended time (17 mins), and baked 2 batched a little longer (about 19 mins), I didn't let them cool for long on the cookie sheets and I thought they were better than the cookies baked for the shorter time/longer cooling. They were crispy on the outside and chewy in the middle.

Simple Garlic and Basil Pesto

Good base for pesto recipe, I did make a few changes; used less olive oil than called for, toasted the pine nuts until lightly browned over a skillet. Added a little extra garlic, and substituted chili powder for crushed red pepper and omitted the brazilian nuts. I served this with cubed chicken breast and fettucini.

Chewy Granola Bars

Not as good as I'd hoped, these were crumbly even though I followed the advice of other reviewers suggesting to press the bars down before and during baking process. Maybe some added peanut butter might be helpful in keeping everything together.
