Fresh Tomato Shrimp Pasta
I made this after doing an ingredient search for what I had on hand and then adapting this recipe. I sauteed all the vegetables first, (used red and yellow bell peppers, onion, garlic and zucchini) and then added one 15 oz can diced tomatoes and 1/4c chardonnay, simmered for 8-10 min and mixed with cooked pasta. I added red pepper flakes for zip. I omitted the shrimp and served this with chicken cutlets marinated overnight in lemon juice, lots of garlic, dried oregano and fresh basil, then dipped in egg mixture and bread crumbs and browned until cooked through in olive oil. I grated parmesan cheese over everything. It was fabulous! I will definitely make this again.

Quick Turkey and Rice
I was searchng for a recipe for dinner last night and I had all these ingredients so tried the recipe and this will be a staple. I used ground turkey which I added to skillet after browning the onions and cooked until no longer pink, then added diced tomato because I didn't have stewed tomatoes. I also added: dried oregano, dried basil, garlic powder, red pepper flakes fresh ground black pepper, and garnished with diced fresh Italian parsley and fresh basil. Served it over brown rice. This is a great basic recipe that you can use in a variety of ways. Quick and easy.

Baked French Fries I
I have made this recipe for years. I have one suggestion: if you like your fries with a creamy center and crisp outside, microwave the potato for 4-5 min first, then slice and make the recipe. Adjust baking time accordingly. Delicious!
