Fruit Pizza

My First time trying Fruit Pizza. This was a very easy recipe. And I had a nice result... the pizza looked great. I cut the slices before adding the creme and fruit. My family liked it but it was too sweet for me.

Garbanzo Bean Chocolate Cake (Gluten Free!)

Nice chocolate taste. Problem with mine was I don't have a food processor so I mashed the beans by hand. As hard as I tried there were still tiny chunks of garbanzo beans. So the texture was way off in my cake...... If I try again, I will use a softer bean (pinto or black beans). I've made cakes with them before, and those have always mashed into the right consistency.

Ham and Bean Soup II

This is almost the same as we've made for years. VERY GOOD.... but one trick we've found is to either add a 1/2 bag of lima beans to the others, or a can of butter beans drained and smushed. It makes the soup thicker and creamier.... especially if you're in a rush.

Pistachio Bundt Cake

I was a little worried about this cake but it was delicious. I made the evening before St. Patricks Day. It had a very nice Pistachio Flavor and was moist and had a good dense texture. I did add a little butter and reduced the oil a little. No need for a glaze . The only problem I had with it was the cake mix taste which I guess is unavoidable.

Neapolitan Bundt Cake

I did use Strawberry Quik Syrup instead of the extract. Otherwise everything else was the same. To start off.....My cake was not pretty. No discernable swirl. Just a blob of chocolate in the middle and tiny lines of strawberry and vanilla around the edge. Also, there were too many flavors going on at once. I'd prefer one solid cake with one dominant flavor. Too much work for an ugly cake that had too much going on flavorwise.

Just okay. My bars wouldn't hold together, less like a bar and more like a crumble or crisp. I used Orange Cake Mix which made a nice flavor combination though.

Halloween Popcorn Pumpkins

TIP: put popcorn in a brown paper lunch bag (no oil necessary) and microwave it. This is healthier than the chemical kind you buy. It is also easier than shaking a pan on the stove. Once popped, Tear a small hole in one corner of the brown bag and shake your popcorn over the trash can to get the unpopped kernels to fall out.

SORRY but this was more like a cobbler than a crisp. My topping was not crisp but kind of doughy / bready. I will use COLD margarine or butter next time.

Strawberry Cake II

EXCELLENT CAKE. I made a few adjustments, used strawberry cake mix for example. Very good. I had to use smart balance spread because I ran out of butter and it was still great.

Peanut Butter Noodles

DELICIOUS! We didn't have udon noodles or chili paste. So I used chinese egg noodles (the kind they use for pan frying) and just added red pepper flakes for the heat. VERY TASTY . Thank you.

Creamy Orange Cake

VERY GOOD except for the gloppy icing. The recipe was follwed exactly and the icing turned out too thin and too much like pudding. I had to leave it off and made a butter cream icing with orange extract. Then it was perfectly delicious.

Chicken Fried Chicken

OUTSTANDING. Forget the cornflakes or dried bread crumbs. CRACKERS made this chicken so crispy and golden. I did use olive oil to pan fry and added cayenne pepper to the dry mix. ONE OF THE BEST uncomplicated FRIED CHICKEN RECIPES OUT THERE.

Southern Fried Chicken

OUTSTANDING. We've tried many fried chicken coatings and this is one of the best. Chicken got really golden brown and crispy. I did soak chicken in ice salt water before hand for 30 minutes and used Olive oil to pan fry. Also added more cayenne pepper to mix. THANKS

Crispy Orange Beef

Maybe I did something wrong but it was WAY TOO SWEET even after reducing the sugar. Beef was not crispy even after waiting all that extra time (30 min in fridge and 10 min in cornstarch)

Strawberry Glazed Pie

VERY GOOD. But my crust got soggy. I used an oreo crust. Maybe that's why. Wish I knew how to keep it crispy.
