Quick and Easy Brownies
I followed someone else's suggestion to only put one cup of flour, but they still came out more like a cake than a brownie. I also put half a cup of oil and half a cup of applesauce instead of the butter. I also dumped in about three times as much cocoa powder as the recipe calls for, tasting it along the way to make sure it was chocolatey enough - I think otherwise it would have been too sweet. The taste is very good (with the added cocoa powder) - I think next time I would put fewer eggs to make it less cakelike, and then it would probably be really good.

Pumpkin Flax Quickbread
This came out really tasty. I don't usually make vegan baked goods - the texture is really dense and drier/less oily than most similar breads, but I sort of liked that. And I love how healthy it is! I made it with a butternut squash that was given to me. I couldn't find sugar-free applesauce (living in Australia) so I just tried to add more squash as people have suggested. Looking at the recipe author's own tweaks, I cut back the sugar to 1 cup, and half of that was brown sugar. I would love to try it again with the applesauce this time, if I can find it!

Strawberry Cheesecake
This was an easy cheesecake to make and it came out tasting really good. They don't have graham crackers here in Australia so I crushed up Oreos instead and omitted the sugar and it worked really well. Also, my oven doesn't have specific temperature settings(!) so I just guessed and ended up forgetting it in there for twenty extra minutes and it still came out great! The top cracked a little bit along the lines where I swirled the sauce with a knife, but I think that is more due to my lack of cheesecake knowledge than anything else, and we didn't care anyway. Great easy and tasty cheesecake recipe! Would definitely make again.
