Buttermilk Pancakes II

These are so easy and so excellent! They are fluffy, tasty, easy to pour, flip, and stay fluffy. I followed the recipe, I had made some fruit compote yesterday from leftover blueberries, strawberries, and raspberries, a little water and about 1/4 cup sugar cooked down to a delicious fresh tart and sweet fresh berry topping. IHOP it's not! Delicious.

White Pizza

Yummy! We love pre-baked crusts and are so tired of pepperoni and extra cheese we can't wait to try this. I love this recipe and will check back with results. And honey EVOV ain't enough white for me...

Mini Salmon Loaf

This is delish, but if you're going to the trouble why not use fresh salmon, poach it and flake the meat? Or buy freshly cooked salmon found in the refrig. section w/ other fish. Instead of chopped celery we sauteed the stalks w/ leaves on them and took them out after cooking, we don't like the cooked celery pieces, my bad. EVOV instead of veggie oil is tasty and try a touch of tabasco instead of black pepper! Also add the same fresh raw dill, to be used in sauce, to the loaf mixture for a surprise complement.

Extreme Banana Nut Bread 'EBNB'

I had a little trouble with collapse in the center of each loaf, but delicious. I got rave reviews and that's what counts. I used the small individual loaf pans, four, and one large. The small loaves take only 30 minutes and are really tasty! Thanks

Berry Cheesecake Muffins

Yummy. For Christmas morning breakfast. I made them fresh a couple days ahead and will refrigerate and reheat to serve again. These are absolutely delicious. There is plenty of room in a regular size muffin cup for 18 of these beauties. Don't worry about being messy, it all bakes together beautifully and tastes awesome. I added another TBS of milk to batter. I baked 25 minutes total, on 375 for 7 min, convection 365 for 7 min, and back to bake 375 11 min. They were perfectly done. I had about 3-4 berries per muffin, they fit fine. Use med or lge egg, Extra Large makes too much. Then, I increased the topping a bit with all ingredients to have about 1 tbsp per muffin! One additional modification I made for personal preference was freshly ground cinnamon (sold in a spice bottle w/ grinder on it by Alesi) Yummy again. This will become a holiday favorite around here. Great for Easter, and July 4th, Fiesta, wherever you want some color at brunch... Do prepare the topping ahead and pop it in the fridge for quick use before topping and popping in oven.
