I'm a type II diabetic, so I'm always looking for lower-carb, high fiber recipes that are tasty!

I really enjoy helping make the Thanksgiving turkey with my mother. I cook, she does the dishes - it's fabulous!

Rice Vinegar Basting Sauce
YUM! I make this with splenda (3/8 of a cup) and splenda-sweetened ketchup, to reduce the carbs. I need to add just a bit more soy sauce when I do so, to balance out the flavors. Also nice as a mustard-free BBQ sauce - a friend is allergic to mustard

Cabbage Roll Casserole
YUM! I tend to make this in my slow cooker,browning the meat first, and mixing in everything else. Also works well with brown rice, upping the fiber a bit. This just about fills my 7qt Crockpot. I cook it on low all day, and the leftovers just get better and better until they are all gone!

Cream Cheese Cut-Outs II
The flavor of this cookie is good, but the dough is SO soft. I had to work with it practically right out of the freezer, and my husband's hands almost melted it immediately. I also recommend rolling it out closer to 1/4 inch thick, and baking it longer. The first tray were under baked, and did not hold together well.
