Caramel Cake II

I should have let the caramel cool a little bit longer before pouring it on top of the cake -- it likely would have set a little better since it becomes more viscous as it cools. I'm not a big fan of the cake because I *hate* the taste of butter, and it's all over the place with this cake. The cake itself is pretty dense and not that exciting. Definitely not for dieters. (Sorry!) But definitely for butter lovers.

Basic Chicken Salad

I really liked this; I was a little surprised -- esp. since I generally don't like nuts in my food. But I mashed the almonds to tiny bits, and that really helped. I also substituted purple onion for the celery (but didn't measure it). I especially loved the tang of the lemon juice. Good stuff! (PS-You can definitely get more than 2 sandwiches out of this.)

Chicken Enchiladas V

Great recipe! It's relatively fast, easy, and delicious. Minor variations: I didn't have any green chiles in my pantry, so I used a 10-oz can of Rotel instead (barely drained, half in the meat mixture, and half on top for some color). I used post-Thanksgiving turkey instead of chicken, olive oil for margarine, and added 1 t. of cumin to the meat. Delicious! Next time, I might try using cream of onion soup? If that's too much creamy stuff for you, go easy on top with the soup/sour cream and cheese mix.

Slow Cooker Lasagna

VARIATION ALERT! My gallbladder and I prefer ground turkey to sausage. I browned it w/onions, garlic, garlic powder, s/p. Then added ONE jar of sauce + 1 c. beef broth (to simmer). Meanwhile, in a separate bowl, I mixed a 15oz tub of ricotta, 1 1/2 c. of mozz, 1/2 c. parmesan, plus parsley, oregano, basil, and one egg. Starting with whole wheat lasagna noodles (6 total), I alternated layers of the above in my crock pot (wiped down with olive oil first - I had no spray), ending with meat sauce. Thanks for the inspiration! It's hot here in TX; I leave the oven off whenever possible. Presentation = great! Noodles = not so gummy. Exactly 4 hours on low. Easy.

Tomato-Curry Lentil Stew

4.5 stars, actually. This was good! Two slight variations for me: I used a full teaspoon of curry (I know me), and added a bit of cayenne pepper (thanks to another reviewer's suggestion -- yum!). This recipe calls for too little water; even after adding 1/2 c. during the cooking process, I ended up with a dish that isn't anything close to a stew. Next time, I'll start with more water so I can end up with a soup/stew. Will definitely make again.

Spinach Lentil Soup

I'm giving 5 stars because it's easy, inexpensive, tasty, and uses things I keep around the house. I used half broth, half water, just in case. And I used fancy salsa the second time but didn't notice a difference. I'll stick with the standard (cheaper!) stuff next time.

Quinoa and Black Beans

Pretty good; nice nutty flavor. If you like heat, I'd recommend increasing the cayenne. (It didn't seem to stick around.) Keep an eye on it, too, so you don't run out of liquid.

German Lentil Soup

I'm surprised by all of the rave reviews. This soup is good, but there isn't really anything outstanding about it. However, I increased the amount of broth to 6c. based on reviews, which may have diminished the flavor since I didn't simultaneously increase the other flavorings in the soup. It's easy to make (hooray!), and for that I'll keep making it. Plus, it's easy to convert to a meat-free dish. I'd eat it again.

Chicken Thigh Fricassee with Mushrooms and Rosemary

This recipe is a good foundation, and for that I give it five stars. I was short on supplies and used chicken broth for the wine and skipped the olives and tomatoes. Nevertheless, I really enjoyed this dish (even though I went overboard with the red pepper flakes -- eek!).

This was good enough, but not as exciting as I expected, based on some of the other reviews. Per others' suggestions, I added lemons, onion quarters, and garlic cloves to the cavity stuffing. Was still very tasty.

Mississippi Mud Cake II

4.5 stars! But three things: 1) I forgot the nuts; 2) I made it the night before and served it cold -- which I loved; and 3) I was appalled by the amount of sugar in this recipe and had to reduce it somehow. I ended up cutting back the amount of powdered sugar in the recipe by a full cup (down to 2c), and it was perfect. I loved the ooey-gooeyness (sp?) of it.

Spaghetti Carbonara II

4.5 stars; it's simple and easy to cut in half. I used maple bacon (my preference), and skipped the wine. When I started eating it, I thought it could have used a little more bacon but the onions made me quickly toss out that idea. It turned out perfectly.

Lamb Chops with Balsamic Reduction

4.5 stars; this was my first stab at making lamb chops and they turned out great. However, I was surprised at how fatty (and expensive!) these lamb [rib] chops were and would recommend easing up on the olive oil. I thought the fatty-ness detracted from the flavor a little bit. I followed another reviewer's advice and cooked the chops in my copper-bottomed stainless pan (as opposed to a non-stick) for 3 mins on each side... and I got a perfectly medium-rare cooked set of chops. It was very good! And easy.

Avocado Feta Salsa

Wow, this is really tangy! It's a lot like guacamole with feta and the tomatoes and vinegar give it a lot of zip. Oh, but make sure you don't have any plans for kissing anyone after you eat this. :) Very yummy.

This dish is good but unexciting. I added minced garlic out of habit/personal preference and would have added grated parmesan cheese on top if I had had some. Makes a nice side dish.

Easy Meatloaf

4.5 stars! This was a very pleasant meal and the glaze was quite tasty. I substituted herb-seasoned stuffing and evaporated milk for the bread and regular milk (that's what we had on hand). I used 1 lb. of ground turkey (personal preference), added 1T. worcestershire sauce, and reduced the onion by half. I will definitely make it again.... good comfort food.

This was good, not great. I made a few changes to suit my diet: turkey meat & ricotta. This lasagna could have used more red sauce. I like mine a little juicier. Next time I'll try adding more crushed tomatoes and/or water.
