Last Minute Chicken Dinner
About this Cook
I am an Allrecipes junkie. Every day I am on here looking for new recipe ideas. THERE ARE SOOO MANY!!!! My recipe box has more recipes in there than I will probably ever be able to make. LOL, but I sure do work hard on it. My family loves the food I make from this site. I have two boys and one girl, as well as a fiance to please. I care for my mother at home as well who needs low cholestoral/ low fat meals. No need to make two or three different meals as we all benefit from the healthy eating with the delicious recipes found here. I love that most of them have the nutrition information.
My favorite things to cook
I make a lot of chicken. I am always looking for new ways to make it because my family gets sick of it! But I love it. I rarely ever bake goodies except at the holidays. So Im a novice when it comes to deserts. Here lately I have been trying to find healthy recipes that I can make in bulk and freeze in individual portions for a quick meal for whomever may need it since we are all busy with different things.
My favorite family cooking traditions
We dont really have any "traditions" to speak of. I am always making new dishes at the holidays. Everyone looks forward to seeing what I'm going to come up with this year. I have only discovered this site about a year ago and let me tell you... last years holiday meals were exceptional, I am sure I will be making some of those recipes again as well as adding new ones. We recently bought an ice cream maker, and have enjoyed making different kinds of ice cream together.
My cooking triumphs
I am very handy in the kitchen making meals out of whatever I have on hand that taste delicious. Most every night I hear 'whats for dinner'? and most often the reply is 'I dont know what to call it'! Its kind of like that one dinner last week but with a different flavor. ;)
My cooking tragedies
While it is a triumph to make scratch meals that taste great. I never remember what I put in them. So that wonderful casserole we had last night. Or the yummy chicken and rice with the perfect flavor is lost forever :(

Mock Chicken Fried Steak
Great recipe! one thing i hate about "real" Chicken Fried Steak is the chewyness, This melts in your mouth. Great for saving on money too. Thanks! I always bake mine instead of frying. I have tried many alterations but the original recipe is great as is.

Broccoli Soup
This is excellent. I love broccoli and cheese soups but dont love the calories. I used left over roasted potatoes from the night before and I think this gave it a great flavor. I also added several twists of a county fresh herb grinder I keep handy. I'm thinking about adding some ff sour cream to make it even creamier next time. Very filling! I wanted a second helping but didn't have room for it!

Bacon Mushroom Swiss Meatloaf
I think I had my hopes too high for this recipe. It wasn't as good as I expected. I love mushroom swiss burgers. This wasn't it at all. The kids didn't like it. My mom just said it was ok. I did like it warmed up the next day on bread. This is probably personal preference. All in all it's a good recipe. Just not for us.
