Lentil Soup
I absolutely loved this soup. It was refreshing and healthy. I did make some of the modifications suggested by other reviewers. I used Balsamic vinegar, added a little lemon juice and doubled the spinach. I doubled the recipe before I checked to make sure I had enough lentils. I was short a cup of lentils so I added a can of cannelini beans at the same time I added the spinach and it came out awsome. I think this would even be good with kielbassi or sausage chopped up in it. Thanks for this recipe - I will make it again.
