Lentil Soup
I absolutely loved this soup. It was refreshing and healthy. I did make some of the modifications suggested by other reviewers. I used Balsamic vinegar, added a little lemon juice and doubled the spinach. I doubled the recipe before I checked to make sure I had enough lentils. I was short a cup of lentils so I added a can of cannelini beans at the same time I added the spinach and it came out awsome. I think this would even be good with kielbassi or sausage chopped up in it. Thanks for this recipe - I will make it again.

Teriyaki Chicken
I made this recipe exactly as written and it came out delicious. The marinade was excellent. I even used low-sodium soy sauce. I also love that this is so easy to make. I did have to bake it for almost 1 1/2 hrs and turn it up to 400 degrees, but my husband said it was the best whole chicken I've ever made. Thanks for sharing the recipe.

Spaghetti Squash Casserole
I am giving this recipe five stars. This was the most delicious spaghetti squash I have ever tasted and it was easy to make. My husband was totally impressed. I didn't have any sour cream so I substituted heavy cream. It came out incredible (although I ruined the healthy aspect by doing this). Yum - It was even better than fettucini alfredo.
