Roasted Spicy Garbanzo Beans

It was strange at first (never had crunchy garbanzo beans before!) but with every bite it became more and more delicious! Now I crave these and make a batch every week for snacking. Love the healthy factor! So far I like it best with salt, garlic powder and curry powder!

Pumpkin Seeds with Cinnamon and Salt

Good potential but as instructed in this recipe it's not very flavorful at all. The cinnamon flavor was very subtle. I would have liked a stronger cinn flavor. Next time I will double the cinn and maybe add nutmeg and cloves too (or a pumpkin spice). Not terrible though.

Suki's Spinach and Feta Pasta

This was good - just a tiny bit low on flavor even though I added veg broth to make it more saucy and added fresh basil at the end. I think this would be perfect with some kalamata olives or marinated artichoke hearts. I will make it again with a few revisions. My toddlers ate it up so that's always good!!

This was great! I used Amy's Organic Lentil Soup, added a whole can of diced tomatoes, fresh spinach and used small pasta shells. I love it!! Super fast, easy, healthy and tasty!

Vegan Split Pea Soup I

I did not like this soup at all - the flavor was strange - perhaps too much onion or celery??? However, my super picky toddlers ate it all up and my husband thought it was fine.

Baked Sweet Potatoes

This was okay. The potatoes were soft - I think I like them a little crispier. Next time I'll bake them on a baking pan instead of a glass dish. I used Italian Seasonings.

Spanish Rice II

This was delicious!! Even my 3 year old ate it up - and he's hard to please! I followed the recipe exactly. Would be even better with some green olives. We topped it with Black Beans and a side salad. Will definitely make again!!!

Foil Wrapped Veggies

I've made this a few times and cannot believe how delicious the potatoes and veggies come out!!! Especially the ones that get a little charred. SO delicious!!!! I follow exactly but also add sliced carrots and used lemon herb seasonings. Even my kids chowed this down!

Grilled Mahi Mahi

This was wonderful!! I am notorious for cooking dry overcooked fish but this came out super moist with the foil (forgot to use a pan and it was fine!)!! I didn't have the cheese and it was still great - thanks!
