Enchilada Sauce
I use coconut oil to be more healthful, and it tastes just great! I also use organic, unsweetened cocoa powder. It makes it less sweet, and just PERFECT! I also puree the onions for a better texture. I've added it to my arsenal of "secret family recipes" ;) Yum, yum, yum! Even my foodie brother asked me for the recipe, which is HUGE!

Sweet Potatoes with Pecans and Sausage
I used home made sausage (yum!), added a chopped Granny Smith apple and a handful of dried cranberries and chopped celery. I was thinking of using persimmons along with the apples. Think it might be good that way, too! I also omitted the sugar and cinnamon, as the fruit added the sweetness. Made a great, healthful all-in-one Autumn dish!

Hot Pepper Jelly
I reccomend using more lemon juice than the vinegar. Also, aple cider vinegar is preferable to the white as it is more palatable. I used lemon zest instead of chile flakes, and I added a half cup of sugar more to combat the pungency of the vinegar. Too bad it was already too late. The jelly is not bad, but not as great as I have had in the past. Still on the lookout for the perfect bell pepper recipe! I think the lemon juice will do it, though.
