Salsa Cube Steaks

Followed directions closely except put a little picante sauce on bottom of pan first. A zippy twist on cube steaks for those who enjoy Tex-Mex fare.

BREAKSTONE'S Creamy Sour Cream Chicken Enchiladas

This is similar to the enchilada recipe we use with leftover turkey every year! To get about a dozen well-stuffed enchalidas increase the turkey by 1 cup. I also add about a 1/2-3/4 cup of chopped greens like kale, spinach, or hanover salad--whatever is in the garden in November. To turn up the heat a little use Pepper Jack cheese or a mix of Pepper Jack and ColbyJack. I put a little picante sauce on the bottom of the pan as well as covering the top of the enchiladas. Bake covered with foil for about 20 minutes and then add cheese for about 10 minutes.

Hamburger Soup I

Wonderful recipe that is easily modified by your personal tastes and what you have on hand. Used broth instead of bouillon and tomato juice instead of sauce. I added black pepper, peas, green beans, a cubed large potato and some dried green/red bell pepper flakes. Served with fresh bread, it is a complete meal.

Scalloped Potatoes and Onions

Very good. Followed recipe ingredients but made the broth/sauce in the microwave instead of pan. Next time I may add shredded cheddar on top for last 10 minutes.

Cowboy Oatmeal Cookies

Oatmeal cookies are my favorite and this recipe is great. Made a few little changes. Added teaspoon vanilla. Used butter instead of margarine and old fashioned oats instead of quick oats. I think oatmeal cookies and raisins are naturals, so made that switch. Perhaps because of my oven or making the cookies a little larger they needed 13-14 minutes. Came out great.

Skillet Zucchini

Excellent. Cut in half for two. Main ingredients fresh from garden. Used grease from bacon and just a small slab of butter. Sharp cheddar. Easy and very good side.

Grandpa's Classic Coney Sauce

I cut the recipe in half and followed ingredients exactly. Simmered in covered cast iron skillet rather than crock pot. This was good, but for my tastes a bit sweet, guess I was looking for more of a chili flavor. So, I added some pepper sauce. If I make again I'll omit sugar and cut back ketchup and add hot sauce or taco sauce.

Tex-Mex Green Bean Salad

As presented, this pretty bland with little Tex-Mex flavor. Having said that, it was an OK side with a Mexi-chicken recipe that provided the heat. I used fresh beans from the garden and added some garlic, chili powder, red pepper flakes, and chopped tomato for color and because I had them. Sprinkled with sharp cheddar and refrigerated for half hour before serving.

Church Supper Hot Dish

Very good, very hearty dinner. We like chow mien noodles as a topping and they were great in this dish. I didn't have any fresh carrots so I substituted a cup of frozen mixed veggies. Slightly reduced amount of potatoes and celery so only used one can of soup. The original recipe had no additional seasoning so I added fresh ground pepper and Morton's Nature's Seasons seasoning salt - used the "taste" method so I didn't measure - probably 1/2 to 1 teaspoon. Without that it would have been bland. Used a super sharp white cheddar.

Turkey Pot Pie

I used leftover chicken from a beer can grilled/smoked bird which was very flavorful, frozen mixed veggies, and added mushrooms. Pre-baked deep dish bottom crust and used rolled crust for the top. Very good.

Oatmeal Pecan Cookies

Excellent. The old fashioned oats give a little more added texture than old fashioned oats. Perhaps it is my oven, but I had to bake for 14 minutes. Also good with raisins.

French Toast II

Similar to my regular French toast method, but the nutmeg was a nice addition - used slightly less than called for. Made it with homemade French bread which I'd sliced a couple hours ahead to allow it to dry slightly. Added a dash of sea salt.

World's Best Lasagna

Excellent. A big hit with us and visiting family. I added about 1/2 cup more water and omitted one can of tomato paste. Didn't boil pasta first. Came out great - pasta done and sauce thick. Used more of all cheeses but didn't put topping on until after removing the foil.

Sweet Potato Casserole IV

This recipe is almost identical to one we've used for 25+ years. A Thanksgiving and Christmas family tradition. I use whole milk instead of the evaporated milk, cut back to 1/2 cup white sugar, and for the topping use 1/4 cup flour and 1/4 cup oatmeal along with brown sugar and pecans.
