Grandma's Green Bean Casserole

Hooray - a change from the icky fried onion casseroles! I sauteed the onions with some garlic in a bit of olive oil, added fresh green beans and then added the flour mixed with the other dry ingredients (halved the salt as others suggested), leaving out the butter entirely. I used fat free sour cream, fat free shredded cheddar, and low-fat Ritz crackers. I will probably use reduced fat cheese next time, as the fat free does not melt very nicely.

COLLEGE INN® Turkey Black Bean Chili

This received rave reviews from the whole family. It is a great and unique use for leftover turkey - especially the dark meat that so often goes to waste in our house! I had to double the recipe for my crowd and ran short of a few ingredients, so I made the following changes: I added a can of corn instead of the second can of back beans; I added 1.5 cups of turkey stock instead of the second can of beef broth; instead of 2 tsp cumin, I used 3/4 tsp ground cumin (all I had left), 1 tsp cumin seeds, and 1/2 tsp coriander.

Wheat Germ Whole-Wheat Buttermilk Pancakes

My kids raved about these and devoured them! It's nice being able to fix something healthy AND tasty. I used Egg Beaters, low fat buttermilk, and substituted sugar-free applesauce for the oil. I also used half wheat germ and half flaxseed meal and added 1 tsp each of vanilla and cinnamon.

Fantastic Black Bean Chili

This was good chili - very hearty but not the best I have had. It could have used more spice. I gave it an extra star, though, because it is so easy to make and seems like it would be versatile.

I made this in my bread machine - it is very thick dough and gave my machine quite a time so I wouldn't recommend that. The garlic turned blue when I cooked it, which I found very odd. The taste and texture of the final product were fantastic!

My brother made this for the whole family when we were together for the holidays and it was great! He used frozen meatballs and left out the onion (as a favor to his big sister). I think the choice of salsa is very important in how this recipe turns out so make sure you add your favorite kind.

Italian Style Meatloaf I

WOW! This is the best meatloaf I have ever tasted by a long shot. It is so full of flavor. I did make some substitutions... used 1 lb of ground sirloin and 1/2 lb of ground italian sausage instead of 1.5 lb of ground beef; used quick-cooking oats instead of breadcrumbs; used 12 oz of tomato paste and 2-3 oz of tomato sauce instead of the canned tomatoes. It turned out fantastic - this is the new standard by which my family will judge meatloaf. My daughter, who "hates meat" even liked it.

Yummy Sweet Potato Casserole

This recipe is so sweet, it is essentially a dessert. It is not cloyingly sweet, though, like when you throw marshmallows and brown sugar in with the sweet potatoes. I followed the recip exactly and we all loved it. I will be serving it on a regular basis as a diet-friendly alternative to other desserts.

Fantastic chili! I use Rotel instead of the stewed tomatoes and onion and serve it with cornbread - YUM! A definite family favorite!

Cream Cheese Sugar Cookies

These are the best sugar cookies I have ever had! Be sure to keep the dough cold while you are working with it because, as the other reviewers have noted, it is super-sticky. Even the silcone-coated parchment paper didn't keep it from sticking! I used powdered sugar instead of flour to work with it to keep it from getting too dry.

JIF® Irresistible Peanut Butter Cookies

These are unbelievable! My mother-in-law was less than enthusiastic that I wasn’t going to make her tried-and-true peanut butter cookie recipe for Christmas, but after reading the previous reviews, I just had to try these. All the reviewers were right – these are amazing! My advice to those planning to make this recipe – make several batches because you will have to taste test ALL of the first batch.
