Moist Persimmon Cookie

I just can't decide whether I like persimmons. These were enjoyable, but I don't know that I'd make them again unless someone gave me some persimmons. Mine did not spread like in the photo, so they looked kind of clumpy.

The Best Bean and Ham Soup

My family truly enjoyed this soup. Lots of flavor w/ a bit of spice. Taste before you add salt, as V8, ham and broth gave it plenty of saltiness for us. I made this in about 4 hours without having soaked beans overnight. I'm not sure why you'd need the all-day cook time as written.

Waldorf Cabbage Salad

Lemon juice on the apples was someone's good suggestion for this recipe. Fresh apples and the mild crunchy cabbage together were just what my body seemed to need tonight. My 7-year-old even said, "For some reason, I like this salad."

If you like winter squash, you should love this. My family, including me, have yet to really appreciate this worthy group of vegetables unless you're talking about pumpkin pie, but we're trying!

Great seasoning if you halve the cayenne, but WAY too much cracker crumbs. I was already into it when I realized how much 8 oz. is. If I'd known, I would have found a different recipe.

Easter Buttermilk Hot Cross Buns

Excellent results just as written, although I used currants instead of raisins. This was a boost to my yeast-bread baking confidence! I did make my own frosting with powedered sugar, milk and few drops of almond extract. Always a sentimental favorite at Easter.

Kiwi Strawberry Smoothie

This is our current favorite smoothie! And, the beauty of smoothies is that you can substitute ingredients or quantities so easily. The combination of kiwi, strawberry and pineapple was so refreshing and did not need any added sugar. Next time I will make a double batch!

Three Bean Soup

We increased the ingredients to serve 60 at a church meal and made it spicy! Worked wonderfully for us: simple, nutritious and satisfying. I give it only 4 stars because recipe did not call for spices (chili powder and cumin), which really made it delicious. Could easily be made vegetarian by substituting vegetable stock. Very well received.

Marinated Pot Roast

This was disappointing because I thought using the Crock Pot would make a very tender roast. (Does lean, grass-fed beef result in a dryer roast?) Ours was dry and the gravy was easy to make but too salty, even with the low-sodium soy sauce.

Creamy Macaroni and Cheese

I can't figure out why this didn't work for us when it was so highly rated. My boys are mac & cheese lovers (homemade and boxed), but they just couldn't eat this one. Seemed like way too much sauce for the amount of pasta, so it was far too cheesy, like eating straight fondue.

Chicken Enchiladas IV

The dominant flavor here is cumin: just not the enchilada I was looking for. Also, I like mine with more sauce. I would have given a 2-star rating except that my husband liked it well enough to finish the leftovers.
