Moroccan Lentil Soup

Oh man this one is delicious! I'm a big lentil soup fan, and I was sick with a cold and wanted something spicy. I tripled the spices, and it wasn't very spicy. The curry combination smelled so sweet, and the heat was pretty mild. Took some to work and everybody asked what I was eating, because they thought it smelled good. I have no idea how Moroccan or Indian this one is, but as a lentil soup, its fantastic!!!

Coconut Curry Tofu

I'm not very good at making curries, and I find a lot of curry recipes on here aren't that great. This one is wonderful! I messed up on the steps and it STILL turned out great. Tasted amazing the next day! Thanks! I look forward to making it exactly next time!!!

Slimmed-Down Potato Salad

This salad is flawless. I don't like mayonaise potatoe salad, but this one is light and delicious. I can't taste the tofu! It literally tastes like I used cream instead of tofu. Very good. Will make regularly from now on!

Tofu Sandwich Spread

I actually like the taste of this one better than the real stuff. I used silken tofu, capers, fresh dill, and 1/4 cup of vegan mayo. This stuff rocks!!! If you use vegan mayo, my nutritional calculator says that each serving has only 69 Cal and 2.8g of fat!!! Two BIG thumbs up for eggless salad!

Red Velvet Cake III

Needed a quick red cake, for my vampire themed party. I wanted to try the other recipe from scratch, but I didn't have time to do a test batch, so I just went with this one. I ended up making cupcakes they turned out great! Everybody loved them. This is yet another great "doctored" cake mix on this site!!!

Cassie's Zucchini Brownies

I made this one by accident, because my all time favourite brownie is "Zuchini Brownies." I wasn't paying attention to the computer screen and clicked on the wrong one. However, I was pleasantly surprised with the results. Whereas the other recipe is a rich, gooey brownie, this is more of a firm cake brownie. Both are great, it just depends on what people prefer. I notice that with some of the reviews people don't like them because their either too gooey, or too cakey. If you prefer a cakey brownie to gooey, go with this one. If, like myself you don't care, either one is great!

Baked Kale Chips

My mom made these for me and between the two of us we literally just ate 3 lbs of fresh kale from the garden. This is FANTASTIC! Doesn't taste like potato chips, but it doesn't taste like kale either. I like how you can very easily control the salt/calorie content and be able to gorge on a very nutritious vegetable. Great recipe.

Awesome Summer Watermelon Salad

Used half the dressing and half the feta. I thought it was great! I used a very sweet watermelon, and I think this would work better with a less sweet one, so I'll save this to use again when I have a mediocre watermelon. Great combination of salty and sweet. I don't think this one would work for everybody, but it definitely works for me.

Caprese Pasta Salad

The real caprese salad is my all time favourite salad, so this idea seemed good too. The combination of fresh basil pesto and the mozzarella cheese really works! Couple of minor things: saved a few basil leaves and slivered them over top of the salad, and added a bit of sweet aged balsamic vinegar, because I usually add that to the tomato version of this salad. Also, fresh mozzarella cheese doesn't shred, so I chopped it into thin slices. Thanks!

Baingan Bharta (Eggplant Curry)

I've made quite a few curries from this site, most with mediocre results. This is the BEST one I've tried. I also used garam masala and ground cumin, and canned tomatoes as that was all that I had. Meat-eating boyfriend didn't mind that this was eggplant!

Lentils and Rice with Fried Onions (Mujadarrah)

I've never heard of this dish before, but I wanted to make it because of the great reviews and the simplicity of it. Words can't describe how good this is!!!! I followed it almost exactly, but looked at with other reviewers said. I added a heaping teaspoon of cumin and a cube of veggie bullion (to make it toally vegetarian). I caramalized one giant onion for about a hour and a half. I agree with the other reviewer to use more onions, because they are so good and get used up fast! (I hate to make more afterwards to go with the leftovers). AWESOME recipe!

Cold Szechuan Noodles and Shredded Vegetables

GREAT! Very refreshing, quick and tasty. I used green tea flavoured soba noodles. I only decreased the sesame oil and increased the rice wine vinegar due to personal preference. I will make again, thanks!

Satiny Chocolate Glaze

Tasted quite good, but the icing went really hard when I refrigerated the cake. If you're going to chill the cake, make sure to take it out at least an hour before serving so it goes back to room temperature, otherwise it will crumble. Doesn't affect the taste in any way though!

Emily's Excellent Taco Casserole

Great vegetarian fast food dish. Seeing as this doesn't keep well, I made a batch for myself. I used 1/3 of a can of veg chili and baked it over the chips for 10 minutes. Topped it with cheese, lettuce and avocado pieces. Super fast and very filling. Will make again. Next time I'll make it with my own home made chili.

Edamame-Stuffed Wontons

What a great low fat alternative to deep fried egg rolls and spring rolls! I followed this exactly with great results. Everybody loved them. Instead of sprinkling salt on the tops of the rolls I made a dipping sauce and dipped them in. I used equal parts of low sodium soy sauce and rice wine vinegar, a splash of mirin and hosin sauce, and 1/2 tsp of sugar. Turned out great!!!

Lentil Loaf

This won over all the ham eaters this Easter! Seriously, these carnivores liked it better than the ham. I added some carrots, mushrooms and shallots to the loaf. I also substituted italian bread crumbs for the bread. I served it with vegetarian gravy (also an excellent recipe on this site). People couldn't believe how good it was!!! Thanks a lot!!!!
