Delicious! I had left over garlic mashed potatoes and left over cooked salmon so only had to make the bread crumb mixture. We had them poolside with a light fruit salad and ice tea......will do this again.

Aw-some Cole Slaw

For diabetics, you can change the white sugar to Splenda - I only used 1/4 cup and it becomes a delicious "no sugar" recipe

Rich Dark Fruitcake

This fruitcake is delicious but costs a fortune to make - definitely a once a year item! I soaked dried cranberries in rum (instead of currants) and used half white sugar and half brown sugar - other than that followed recipe. I made a couple of cupcake size ones to taste and the big one is wrapped and in the freezer for the holidays. The cupcakes tasted superb.......

Carrot Cashew Quiche

Really enjoyed this - always looking for something different - Got rid of the honey and used fat free half and half. Chopped the carrots and cashews in food processor. Will make it again

Cran-Broccoli Salad

Wow! Great salad. I also tweaked for my preferences. Increased sweet to 2 tblsp maple syrup (sugar-free)and used 1/2 cup fat-free mayo instead of oil. Yum! I was buying something like this at the deli - so much more inexpensive to make myself.
