Deep-Dish Beef Bake

I used canned diced tomatoes (drained) and shredded italian blend cheese since that's what I had on hand. I also seasoned the mixture with a little salt and pepper, italian seasoning, and garlic powder before I spread the sour cream mixture on top. Really tasty.

Feta Chicken

Read the other reviews and made a couple of changes based on what I had on hand. Used crushed seasoned croutons because I didn't have any bread crumbs. I used regular feta and added basil and sundried tomatoes. Pounded the breasts flat, added the feta, and rolled in the crushed croutons. Drizzled a little EVOO and baked for about 35 minutes. Delish! Definitely a keeper.

Chicken And Apple Curry

This ended up being great, but I did make some changes. I used chicken tenderloins, seasoned them with poultry seasoning and sauteed them in cooking spray. I removed the chicken and made the sauce in the same pan according to the recipe, then returned the chicken to the pan and simmered until done. But after tasting, I thought the dish was way too bland. So I added more curry, about a quarter cup of golden raisins, and 2 teaspoons of brown sugar. Served over couscous - delicious!

Baked Paprika-Parmesan Chicken

Liked this a lot. Added a tsp. of garlic powder to the flour mixture, and only cooked it for 40 to 45 minutes as suggested by others. Will definitely make this again.

Sicilian Meat Roll

Made a couple of changes - used only about a pound and a quarter lean ground beef so only used 1 egg and substituted tomato sauce for the juice. I also used a shredded italian cheese mixture instead of just mozzarella. I poured the rest of the can of sauce on top when I added the cheese during the last few minutes of cooking (which only took about 50 - 55 minutes because it was a smaller loaf). Delish!

Beef or Chicken Marinade

Salisbury Steak Deluxe

Not awful, but I thought it had too much mustard, and not enough horseradish and worcestershire. I'll change the measurements next time to 1 tsp mustard, 1 tbsp worcestershire, and 2 tsps horseradish and see how that tastes. I used only a lb of ground beef, and kept other measurements the same, and had no problem with the patties staying together while cooking.

Southwest Chicken and Pasta

This was good! I didn't change the ingredients, but I did change the way I cooked it. I used boneless chicken breasts that I cubed and then browned, and added the green pepper after the chicken was almost done so it didn't get overcooked. I then added the soup, milk and salsa and simmered while the pasta cooked (and I used penne because that's what I had on hand, and a little less than what the recipe called for because I like it a little saucier). I also used frozen chopped broccoli, and added that to the chicken mixture just to heat through. Added the cooked and drained pasta to the chicken, and it was done. Yum!

Flat Iron Steak with Three Pepper Rub

Really good! I had to make a couple of substitutions. I didn't have chipotle chili powder, so I used a half teaspoon of cayenne instead. And I used onion salt instead of onion powder. Next time, I'll cut back on the salt overall. But this was very tender and really tasty.

Smoked Sausage-Potato Hash

Good meal in a hurry. I browned the sausage in olive oil, added onions and peppers, then added frozen hashed browns, instead of cooking meat separately. I also added some garlic powder and dried parsley along with salt and pepper. Tasty!

Granny's Swiss Steak

This was good, but I agree with the other poster who thought that the ketchup made it a little too sweet. Next time I will substitute tomato paste (and maybe a tablespoon of worcestershire) and see how that goes. I like the fact that the vegetables stayed crisp, but some may prefer that you saute them first. Not a bad recipe at all.

Pesto Chicken Florentine

Delicious! Changed it a little - used a jar of alfredo and the pesto since I didn't have the mix, used only 2 chicken breasts, added sliced mushrooms a few minutes before adding the spinach, and would have added more spinach if I had more on hand. I also used a liitle less penne pasta, as I prefer it saucier. This is a keeper!

Turkey Sausage Breakfast

I used this recipe as a base, but adapted it to what I had on hand. I used 2 italian sausage links (about 1/3 to 1/2 lb) crumbled and browned and added a little bit of red pepper flakes (would have used hot sausage instead if I had it). I sauteed a little bit of diced red onion and green pepper, and added to the sausage and potatoes in a large bowl. I used a fork to beat 5 eggs along with the milk, and a little dry mustard, salt and pepper, then added about half of the cheese. I combined the egg mixture with the sausage and potatoes, poured it all into an 9x9 pyrex dish, and sprinkled the rest of the cheese on top. Bake at 350 for about 35 to 40 minutes. Very good. (Especially with a Bloody Mary on a Sunday morning!)

High Temperature Eye-of-Round Roast

Delicious! I used a steak rub on a 2 lb eye of round roast - 15 minutes and then turned the oven off. The best roast beef I've ever made. Will definitely make this again.

Smoked Sausage with Pasta

I changed this recipe too, based on what I had on hand. I browned the smoked sausage and added about 1/4 cup each of chopped onion and green pepper along with 2 cloves garlic, 1 can drained diced tomatoes with mild green chili's, a small can of sliced black olives, an 8 oz can of tomato sauce, and some italian seasoning. Also, I used thin spaghetti instead of angel hair. Very quick, easy and delicious.

Frogmore Stew

I made this for a crowd a couple of years ago and my friends still talk about it. I also added 2 or 3 onions cut into wedges. It rivals a crab feast with steamed blue crabs - and that's saying something in Maryland!
