Mexican Rice II
I doubled the recipe for my family of 8 and everyone LOVED it. I will not buy store boxed mexican rice again. This was incredibly easy. It will definately be a staple in our house!!! Thanks!!!

Ten Minute Enchilada Sauce
I am an absolute mexican fanatic. I make mexican all the time in my house and this is by far the absolute best enchilada sauce i've made, I will not make or buy another kind....ever...
