Slow Cooker Beef Stew I

Made this just as written, tasted yummy and the house smelled great all day long while it was simmering in the crockpot! Next time I make this I may double the broth and add more potatoes and veggies - I like to make LOTS when I make soups/stews and freeze the leftovers for work lunches and this recipe didn't make a ton of stew.

Grandma's Corn Chowder

Had a WICKED craving for corn chowder for some reason, and this fit the bill. This chowder is rich, creamy, and sweet. Next time I make it I will add more potatoes and things because I like chowders more chunky, but that is just personal preference. A nice thing about this recipe is that it was easy to slim down a bit for my diet! I used fat-free half and half and Canadian bacon instead of regular, and you would never know the difference! Such great comfort food :)

Raspberry Coconut Layer Bars

These are to DIE for! So rich and lovely! I have made these twice now, and have given out the recipe many times. People love them! They look impressive, too - someone asked me if I had gone to a bakery to get them. They do take a VERY long time to make because of having to wait for things to set and chill, so make sure that you make these a day or 2 ahead of when you need them - they are not something you can whip up the morning before a party. Just a tip - I had some trouble getting the chocolate to melt to a consistency where it would drizzle prettily. My solution - I heated a pan of water to almost boiling and then turned off the heat. I put the white and semisweet chocolates in different Ziploc bags and placed them in the water to melt. Once they were all melted, I cut off one corner of the bag and voila! Chocolate drizzle!

Four Cheese Macaroni

I have made this several times now exactly according to the recipe, and people love it. It seems a lot of reviewers have played with the recipe, but it is very good as it is, too. It does make a mess out of the kitchen with all the cheese shredding, and it probably costs $20 to make each time because of all the cheeses you need to buy when you make it. This has become a very "special occasion" mac and cheese for my family, but everyone always enjoys it and people ask for the recipe all the time. Who doesn't love a good, homemade mac and cheese?

Peanut Butter Kiss Cookies

I found this dough, when left the way it is written, was super super sticky and I did not have the time to let it chill and firm up. I added about half a cup of flour to the dough and it set up a little more nicely so that I could roll it with my hands and not have dough inbetween my fingers. I also doubled the recipe and found it made a LOT more cookies than written for - I got about 3 1/2 dozen from doubling this. I always roll mine in sugar before baking, as well. Overall, these came out pretty well considering how fast and few ingredients this recipe uses, but I have made much much better versions of these cookies.

Cookies 'n' Creme Fudge

This was so fast and easy to put together! It is yummy but it is super rich - it really needs to be cut up into at least 30 servings because it is hard to finish a whole big piece. I didn't have white chocolate baking squares - so I used white chocolate chips instead. Seemed to work just as well.

Pasta with Spinach Pesto Sauce

Ok so I have a few comments. 1. Cover almost anything in Parmesan cheese and bacon and I will eat it. This needed extra of both to be edible (I really hate wasting food.). 2. I do NOT recommend using a blender to make this recipe. It took forever and was VERY frustrating to make - I had to keep stopping the blender and pushing all the spinach leaves down to the bottom. 3. This is MESSY to make! I just scrubbed the kitchen floor this afternoon and now it has little green stains all over it from me splashing from the blender and the pan on the stove. 4. Despite the fact that I know there is tofu in this, I keep wanting chicken tossed in it to add protein. If I made it again - which I will not - I would skip the tofu and just toss grilled chicken in with the pasta. All that being said, considering this is ridiculously healthy for a pasta dish, I appreciate the innovation of using spinach for pesto and adding tofu for its added health and nutrition benefits as well. But overall, the flavor of this is off I will probably force myself to eat the leftovers, but I won't make this again.

Chicken Wing Dip

MmmmmmmmmmmMMmmmmmmm. Easy to go overboard and eat way too much of this! Used bleu cheese (Ranch is NOT what goes with buffalo wings for me.) and it was super super SUPER yummy. Needs to be warmed up for me. Served it with celery sticks. SO GOOD!

Seven Layer Taco Dip

This recipe makes a TON of dip. But in the end - it's seven layer dip. You can pretty much do whatever you want to it and people will like it. Great for tailgating or football games.

Easy Slow Cooker Chicken Wings

Just OK for me. I made these for a party and was looking for an appetizer I could use the crockpot for to get them done early. By the time my guests showed up (about 5 hours on low) the wings were cooked and flavorful - the sauce was thin, but the wings had absorbed the flavor and were pretty yummy. By the end of the party, though (10 hours or so on low) the wings were overcooked and the meat had fallen off the bones. If I made these again I would take them out before they overcooked, and then maybe bake them in the oven a little so they aren't quite so mushy. And maybe add a little honey for sweetness, and more hot sauce. And definitely buy wingettes if you can find them. Worst thing about this recipe is hacking up the whole chicken wings! Blech!

Mushroom Lentil Barley Stew

This has many good reviews, so maybe this recipe is just not to my taste... I made a whole pot, had a few bites, and decided that this was just not for me. I love muchrooms, but something about this is just too mushroom-y and earthy. And I agree with other reviewers - way too much pepper! I would recommend cutting the black pepper in half. Most of the broth boiled off or was absorbed by the barley and lentils, leaving a very thick, hearty stew. But this is not for me - I won't be making this again.

Slow Cooker Chicken Cacciatore

The chicken was dry, the sauce was runny, and there wasn't very much flavor to it, even when I added some of my favorite spices and extra garlic. We didn't even finish the leftovers. It smells amazing, but just falls flat with taste. Won't make this again.

Easy Morning Glory Muffins

These are very yummy - I took the advice of some of the reviewers and, in an effort to make these even better for you, subbed 1 cup of pumpkin puree for the up of oil. The flavor is great, but I find the muffin papers tend to stick to the muffin. So whatever you do try to do with these, make sure not to cut the oil out entirely :)

These didn't come out for me the way the pictures looked, but they are still pretty yummy. Not quite sure what I did - my sauce came out a little soupier than stickier. But the wings were still yummy and sweet. Worth another try for me.

Slow Cooker Cream of Potato Soup

This is so easy and so yummy! No leeks at my local market, so I used a Spanish onion instead, and added some sauteed carrot and celery after I mashed up the soup - no blender so I used a potato masher before adding extra veggies. I can imagine this would be amazing with some bacon or smoked sausage, as the contributor suggested. A little cheddar cheese on top is great, too!

Steak Tip Marinade

First time I ever tried marinating sirloin tips and this was super yummy! My family really loved it and I was impressed myself. I followed the recipe exactly and let the tips sit for about 36 hours before cooking. Great flavor and so good!

Brooklyn Girl's Penne Arrabiata

This was SO YUMMY! I made it exactly according to the recipe, and although I loooove my food spicy and thought this had a lovely kick to it, I will probably cut down the red pepper next time I make it for my family members who do not like spicy food. Had leftovers for lunch today and it is even better after sitting for a day - the flavors are just great. At least as good as my local Italian restaurant, if not better!

Spicy Beef Filet in Oyster Sauce

Hard to pinpoint why I wasn't crazy about this recipe - I think I wanted more of an oyster sauce flavor but the pepper in it was pretty overwhelming. I know that's why the person who submitted the recipe likes it so much, but I would tone down the pepper next time (and I like spicy). Served it with some nice steamed veggies over brown rice and it made a very nice meal.

All-Day Apple Butter

Mmmmmmm yummy! I had just gone apple-picking and had tons of apples to use up; this recipe was a great way to do that! Just set it in the Crockpot before going to bed and finished it in the morning - so easy! Cooked down nicely, although mine needed an extra hour or 2 in the cooker to get rid of some excess liquid in the mixture. Took a whisk to it when it was all done because some of the apples looked a little chunky and it came out wonderfully! Planning to use these for stocking stuffers at Christmas :)
