Roasted Green Chile Stew

I took this recipe to a chili cook off and won!!! The only change is that I omitted the oregano as I am not a fan. I am a New Mexican no longer living in New Mexico but I get a supply of frozen green chili every year at harvest time and it is sooooo worth the trip.

Baked Fresh Cherry Pie

This is the first cherry pie I have ever made and it was delicious! I took it to a gathering and was repeatedly asked for what the thickener was... everyone loved the consistency of the filling. I don't have much experience with fruit pies but apparently the tapioca is not all that common and it worked beautifully. YUMMY! I will be making this again and throughout cherry season every year. BTW, it is ridiculous to try to pit cherries without a cherry pitter - if you are going to do this more than once in your life then just splurge on the ten bucks - its worth it!

Southern Peach Cobbler

This was FABULOUS!!!! I took it to a gathering where there ended up being 5 fruit desserts (cherry pie, apple pie, raspberry tartlet, etc.) and it was the only one that got RAVE reviews! I did do two alterations - 1. I increased the topping to about one and half times as others had suggested. 2. I used 6 peaches and a pint of blueberries since I had them on hand and it sounded good to me. Everyone LOVED it - I even got a "this is just like my grandmother would make!" Definitely a keeper recipe.

Creamy Chicken and Wild Rice Soup

I thought this was good but I did make changes so it is not an accurate review of the recipe. I added sauteed mushrooms, onion and bacon to make it comparable to a soup I have had in a restaurant. Otherwise I stayed true to the recipe. I do think that heavy cream can be taken out and subbed with something else - half and half or even whole milk... that is a whole lotta calories when I think the same thing can be achieved with something less rich. Next time I will do that...good overall though.

BBQ Pork for Sandwiches

Peanut Butter Bars I

Very good but, in my opinion, a little too sweet. Next time I will definately decrease the amount of sugar AND will make a thinner layer of chocolate. Otherwise it was great and the texture was yummy. I took this to all my neighbors on Fat Tuesday and they all raved about them - PB and Chocolate is a winning combination.

Honey-Ginger Grilled Salmon

Love it! I did add fresh ginger and fresh garlic instead of powder and I broiled it instead of grilling but it was SPECTACULAR. Served on top of a salad with a homemade dressing using all of the elements of the marinade. YUMMY!

Mom's Zucchini Bread

Very good but I did make some changes from the original. (1) I did half and half brown and white sugar. (2) I did half and half veg oil and applesauce. (3) I added a touch more cinnamon. (4) I used 3 cups of undrained zucchini. Very moist and delicious.

Slow Cooker Chicken and Dumplings

Just okay. A little salty but I suppose that is the soups addition. I served it with biscuits rather than doing the dumplings so I wasn't entirely true to the recipe. I probably wouldn't make it again.

Chicken and Corn Chili

Nice and easy. Chicken is fall-apart-tender. It makes a quick simple meal in a pinch and with the right toppings it can be very satisfying. Not gourmet but a good weeknight supper.

Skillet Bow Tie Lasagna

This was pretty good but I changed a few things. I used half italian sausage and half beef to add a little spice. I subbed ricotta for the cottage cheese because my italian husband would kill me if I made lasagna with cottage cheese. And, I used campanelle pasta rather than bow tie so that it looked more like lasagna. The verdict was that it is a very good easy dinner but not quite lasagna. Another reviewer said it was like a home made hamburger helper and I think I agree. The low hassle alone will have me making it again.

Roasted Chicken Noodle Soup

I did not have some of the ingredients for this and we were all sick with colds so no one was going out for those few items (oregano, poultry seasoning, and flour). So, I made it without those and it was still DELICIOUS! Incredibly creamy considering it only has one cup of evaporated milk in it. My husband said it was almost a cross between chicken noodle and baked potato. This is my new chicken noodle for a cold soup. We all loved it!
