Garlic Mashed Potatoes Secret Recipe

Easy recipe, great for crowds. I scaled it back to 10 servings. I love garlic and put it in everything, but 1/3 cup was overpowering. Next time I'll try 1/4 cup and saute the garlic before adding to the potatoes. The raw garlic was just too much for me, though my guests loved them!

Avocado Shrimp Ceviche-Estillo Sarita

Delicious! Added 1/2 a red onion instead of a whole white & that was plenty. I used precooked shrimp, otherwise prepared the recipe as written. Served with baked tortilla pieces instead of saltines. This one is a keeper, a good bit of summertime in mid-winter. This did make way more than 4 servings. We served it as an appetizer and 12 people went through about 2/3 of it. Looking forward to having the leftovers later!

Mushroom Sauce Baked Pork Chops

Delicious! A tasty, filling meal perfect for winter. I seasoned the chops with pepper & season salt, doubled the soup, sauteed fresh mushrooms with the onions, and served it with french cut green beans. Plan on 1 1/2- 2 hours cook time, the potatoes were still raw after the first hour. Next time I may try baking the potatoes by themselves while I prep the chops and sauce, that way I'm not waiting an extra hour to serve.

Butternut Squash Risotto

The initial risotto was good, leftovers have been even better. This makes a huge batch so plan on eating it for several meals. We added sauteed mushrooms and baby peas, without it may have been too much of the same texture. I added the squash toward the middle/end of the chicken stock and that seemed to work well, otherwise I think it would have taken much longer for the rice to cook. Use a huge pan when making this, our biggest was overflowing!

Blueberry Spinach Salad

Great flavor combination, perfect for summer. We already had a raspberry vinaigrette, so we used that over spinach, butter crunch lettuce from our garden, and topped it with pecans, blueberries, and crumbled feta. Absolutely delicious and done in 10 minutes. Yum!

Pumpkin Bread IV

No need to try out any other recipes, I'll be using this one over & over.. I made one loaf, regular sized muffins, and mini muffins and each turned out great. The versatility is a big plus. I did add chopped walnuts and the flavor is fantastic. My apartment smells great and my husband decided we're having muffins for dinner.

Italian Pasta Salad I

This made a great summer dinner when we didn't want something heavy. The dressing is delicious! We didn't have an onion so I omitted that, but added chopped grape tomatoes, sugar snap peas, and cooked shrimp. Next time we'll try chicken instead.

Ginger-Lime Chicken with Coconut Rice

This was a great dinner, and very easy!! The coconut rice (which I made with brown rice) was excellent. In the future I'll make it with one lime instead or marinate it for just 15 minutes, it was a little too acidic for me. Overall it was great! I agree with others that the ingredients are best when eaten in the same bite.

Delicious Ham and Potato Soup

This is my new favorite! Last time I added peas & carrots rather than celery, & this time I added some paprika as well. I served it with some baking powder biscuits, & my fiancee topped his soup with cheddar. This is by far the best soup I've ever made.

Butternut Squash Bisque

Haven't served it yet but I've tasted enough.. This is my first time making anything with squash, but it was very easy. I did as previous people recommended and cooked the squash halves while I sauteed onions, carrots, apple, and garlic. Once cooked, the squash was easy to scrape from the skin and its softness made blending even easier. It's simmering now (smells great!), and I've added cinnamon, more nutmeg, and paprika. I tried a small amount with curry powder, but I may skip that tonight. I don't think my fiancee will like the pureed texture, so I may add noodles or gnocchi. I'm definately keeping this one in my recipe box!

Stuffed Mushrooms I

Flavor was good, though not as flavorful as I'd hoped. I forgot the garlic salt, but sprinkled the top with a parmesan/bread crumb mixture. It made more stuffing than we had mushrooms for, so we had the rest on crackers. I think I prefer it as a spread than stuffing for mushrooms.

Baked Haddock

I didn't have any bread crumbs, or even corn flakes, so I used crushed flakes from Raisin Bran. Picking out the raisins was an adventure, but definately worth it. I followed the tip to brush the butter on, adding some lime juice to make it interesting. It was absolutely delicious, better than I expected from a thrown together dish. The bran flakes gave it more texture & a good flavor. I just wish I'd made more!
