Cajun Cabbage with Rice
This is great. Even the teenager liked it, and he is picky. I did make a few changes. The tomatoes had Chipolte not chilies, and I used tomato paste instead of sauce.I used brown rice . I added some water and I didn't put the cayenne in it . I cooked it quite awhile to get the rice cooked. It was not hot, just a little zippy.Probably by using the chipolte it wouldn't be cajun. But it was sure good.Yum!

Flourless Peanut Butter Cookies
These are really good. They are really rich and sweet. They keep well and don't dry out. I love them with a hot cup of tea. Really peanut buttery .

Honey Roasted Red Potatoes
These are super good.. I loved them. I used about 5 medium potatoes, cut into bite size pieces. I didn't feel that I had quite enough sauce on them, so I doubled the sauce. I probably had more potatoes than the recipe called for. I did substitute olive oil for the butter, and I used sea salt and whole grain mustard.I will be making these again. They were good warmed a little the next day as well.
