Oatmeal and Wheat Flour Blueberry Pancakes
Wow. These are excellent. I made half the recipe and got 15 small/medium pancakes. I only had regular oatmeal so I ground it (3/4 C of oats) into flour in the food processor. I replaced the oil with applesauce and for the liquid, I used 1/2 C kefir and 1/2 C low fat milk. I also added a 1/2 teaspoon vanilla. I made half the batch with fresh blueberries and half with mini chocolate chips. Next time, I'll make the whole recipe and freeze the leftovers.

Delicious Salmon Pasta Salad
This was very, very good. I was looking for something to make with a can of salmon and pasta and this was perfect. I didn't have broccoli so I sautéed a zucchini instead; I also added a chopped tomato and half a can of chick peas and a bit of chopped onion. I couldn't believe that a cup of olive oil wouldn't be too much so I only used a half but I think next time I will try a cup. This made a huge bowl of pasta salad and the dressing was readily absorbed. It was still good though with half the oil so suit yourself. Nice with a good grated cheese on top. This is a very flexible recipe. Thanks!

Lamb Stew with Green Beans
Delicious with cubed top butt of lamb, shallot, green onion, sauteed swiss chard and Italian-seasoned diced tomatoes.
