Persimmon Pie

We really liked this pie, what a great recipe for persimmons! Out of necessity, I substituted one can of condensed sweetened milk plus 1/4 cup 2% milk for the sugar and half-and-half ;which worked fine but was quite sweet. As written would be just right, or maybe even a little less sugar if your persimmons are very ripe (as mine were).

Honey Baked Chicken II

This chicken recipe was GREAT! I had 4 leg/thigh pieces, halved the sauce recipe, and marinated it in the fridge for a day and a night. In baking, I covered the chicken for the first 30 minutes and uncovered it for 25 minutes more, basting a few times. The chicken browned beatifully and the flavor was wild! I didn't have curry powder so I put together my own curry blend, mainly cumin and turmeric with dashes of chili powder, cardemon, cinnamon, black pepper, mustard, corriander, and ginger. What an awesome recipe. I made an inexpensive version, a small handful of mini scallops, 8 medium shrimp, a bunch of mussels, a filet of basa cut up into about half the recipe for broth. We will have it often! Thank you!

Premium Tres Leches Cake

This cake turned out FANTASTIC! I can't see any reason not to use the suggested yellow cake mix and make one from scratch. We have been buying them from our local mexican bakery and this is easily as good. I agree that the whipped cream must be substituted for a canned frosting, thats the only reason I didn't give this 5 stars. I made the cake the evening before the party, poured in the liquid and refrigerated it until ready to serve, thats when we topped it with the lightly sweetened whipped cream and halved strawberries. I didn't find this recipe to be too dry, just right in our opinion. Wonderful!

Polenta

Good starter recipe! I used 1/2 cup less water as suggested by some, put half the cornmeal in 1 cup cold water-brought remaining water to a boil, (to which I added a sprig of fresh rosemary and a little salt)-then stirred in the cold mixture. It cooked very quickly. Then folded in about a tablespoon cream cheese and 1/4 cup shredded cheddar-rolled it up in plastic wrap to be sliced later. Served hot medallions with red Italian meat sauce. Yummy!

Red Chard and Caramelized Onions

As I occasionally do, I craved greens this morning, went out to my tiny garden and picked a bit of chard, to try this recipe. I had no olives on hand and my chard was green, but followed the rest as written. I really liked it! Wonderful flavor combination. This was the first time I have eaten chard. I will try other greens cooked in the same manner. Thank you!

Swiss Apple Pie

I thought this was exceptionally good and wonderfully easy and fast! I noticed right away that there was no spice and so, added a good bit of cinnamon and a tiny pinch of clove to my dry ingredients. We enjoyed it so much that I made another using some of my firm, yet very sweet persimmons in place of the apple. I have a tree and am always searching for new things to try with them. I will never bother with anything more complicated again, it was GREAT! I think you could use different fruits to enjoy this recipe.

Epicurean Deviled Eggs

Hi, I found this recipe when searching for an addition to deviled eggs since I didn't have quite enough mayo for my usual recipe. I took a chance and added some melted butter to finish mine off. This is WONDERFUL! The butter adds a richness that we loved. I think using mayonaise AND melted butter is a keeper!

Mack's Tunaburgers

This was a VERY tasty recipe! We can't have hot pepper sauce so I substituted about 1/4 cup fine chopped onion and a little powdered ginger. I also used the whole egg for a bit higher protien. I did use about half the recommended teriyaki sauce and fresh crumbled whole wheat bread, (about a piece and a half), to one can white albacore tuna.

Cinnamon Carrot Bread

This is an awesome bread! Not too sweet, just right! I used double the recommended grated carrot because I had a lot of carrots to use up and it was perfect. Lowered the fat content by only using half, and applesauce for the remainder. Family ate half the loaf just trying it out. A real keeper!

Mexicana Shrimp and Vegetable Kabobs

We loved this recipe. I boiled my shrimp skins, (not the shrimp itself), then reduced the liquid down to about 3/4 cup and used it as a base for the rest of the ingredients in the marinade. Read about that in another recipe... adds SO much flavor! Also marinated chunks of corn on the cob and grilled it along with the kabobs. I cooked,(microwave-steamed), the veggies just a little before putting in the marinade, and lightly buttered everything before the grilling. Less time on the grill left the shrimp juicy.

Ginger Glazed Mahi Mahi

Wow! This was SOOO good! I had to use powdered ginger,(about 1/2 teaspoon), because thats all I had. I was out of olive oil so I substituted peanut oil. I was afraid it would overwhelm the flavors but we LOVED it. (I didn't use it for the final fry though, I thought that WOULD be too much.) Hubby had the Mahi-Mahi, but I had salmon prepared the same way. Excellent! I will make this again, next time with the olive oil, to check it out as written. Thank you for this recipe!

OH my goodness! This was one of the best flavors I have ever tasted. We had a few potatos and 1/4 head of cabbage left from the boiled corned beef dinner last night... I added them to the ingredients which probably changed it up just a bit. This will be a regular meal for us. My husband loved it too!

Buttermilk Pancakes I

These were the best pancakes I'd ever made from scratch. This WILL be our recipe to follow. I used an unbleached flour, and made the buttermilk out of 1% and a tablespoon of vinegar. Also used olive oil since that was all I had. The flavor was just exceptional!

Chocolate Heart Cookies

Quite a yummy cookie. I read other reviews and so decided to add an egg, a little more sugar, and worked with a very cold dough. I had fun cutting heart shapes and removing a small circle from half of them before baking. Using a cherry jam filling,(cherry jam heated to the melting point and simmered low for 7 minutes), I then layered a heart with a hole, over a intact heart to make a, "Cherry jam window". I dusted them with powdered sugar to finish.

Bierrocks II

Very nice! I had a whole wheat pizza dough, so I rolled it out in a rectangle and cut into eight pieces. I used a half package of onion soup mix to season the filling. Hubby liked his with spicy jack cheese in it.

Zesty Tilapia with Mushrooms

My daughter made this for our dinner tonight, it was very good! The name says it all - VERY zesty. We used fresh mushrooms and so, cooked them right at the beginning with the fish. Our small fillets cooked quite fast... maybe 3 minutes each side. She served it with roasted asperagus and red potatos. I will make this again!
