Out of this World Turkey Brine

4.5 stars as written, our family gave it a 5 with some small changes. First, I cut the salt down to 1 cup. I thought 1 1/2 cups would be to much and it would have been to salty. I did use the type of salt called for in the recipe. After reading some reviews, I remembered someone had used large ziploc storage bags. I can't remember which section of the store they are in, but they are Ziploc brand XL storage bags. So I used HOT water for one gallon and mixed up the salt and sugar until it dissolved and then added the other ingredients and the 2nd gallon of water. Then I placed the turkey in the bag and placed the bag in a cooler filled with ice. Then you don't have to worry about gross turkey juice in your cooler. I let sit for 2 1/2 days, then drained and patted the turkey dry. Placed in the roaster and stuffed with quartered apples and an onion. I roasted it breast-side down at 500 degrees for 30 minutes, then turned it down to 325 and roasted til done. I made gravy with the drippings using milk and flour. I DID NOT add salt and if I would have added salt to the gravy, it would have been WAY too salty. Overall a very good brine and my turkey was very juicy and flavorful. Will use it for Thanksgiving dinner.

Waffles II

This was very easy, easier than my usual waffle recipe. But it was lacking a bit in texture I am used to. I added some vanilla extract and sugar. Good for a quick recipe. I will make when I am in a hurry, but prefer my usual recipe if I have time.

Easy Garlic Broiled Chicken

3.5 stars. I used half butter, half olive oil and mabye a little more garlic. I mixed it all up and put in a 9x13 pan with the chicken and put it in the fridge. After a few hours I baked it in the oven. It was moist, but not as flavorful as I had hoped.

Bow Ties with Sausage, Tomatoes and Cream

I made this with a few changes. I got a package of four cheese italian sausages at Walmart clearanced out, so I used that for my sausage. Still removed from the casings and sauted with red onion and green peppers. I left out the oil, I didn't think that I needed it. Instead of tomatoes I used half a jar of sun-dried tomato pesto. Added some parmesan cheese and a little of the starchy pasta water for the sauce. Tossed with the bow-tie pasta and served. Very good.

Applesauce Bread

3.5 stars for us. It took a little longer to cook and it didn't rise nice. I used the same baking powder and soda in a muffin recipe that same day and they rose fine, so I know it wasn't that. I was looking for a recipe to use up some applesauce I had canned, but for a quick bread I would probably make the Maine pumpkin bread from this site instead.

Mother's Applesauce Muffins

Made this with a few changes. My son wanted chocolate chip muffins, but I had applesauce to use up so I made these, with changes. I left out the cinnamon, allspice and raisins. I only had 2 cups of all-purpose flour, so I used 2 cups AP and 2 cups WW. It was pretty sweet, so if I make it again I will leave out some sugar. I ended up with 24 muffins and extra batter, so I used the extra batter to make a small loaf also.

Apple Butter Pork Loin

Pretty Good, I did change a few things though. I left out the sugar, water, and spices. Instead I seasoned with salt, pepper, garlic powder, and poultry seasoning. Then I only used 1 cup of juice. Covered in homemade apple butter and roasted until done. Served with roasted red potatoes.

Country Pasta with Mozzarella

I had bacon and mozzarella in the fridge, so I put them in the search and this seemed like a good recipe. As written it would be very greasy and bland. I drained some of the bacon grease and used 3 garlic cloves when it really could have used more. Also added salt and pepper, and garlic salt/powder. I had some leftover chicken in the fridge that I minced up and added. Next time I'll just make carbonara and call it good.

Chicken Alfredo Pizza

I made this mostly by the recipe, but I used store bought crust. I made the sauce first which had somewhat of a werid texture becuase of the cheese I think. I tasted ok, but it was very thick and when leftovers were re-heated, it was not saucy at all. For the chicken I sauted it in some minced garlic, butter, olive oil, and herbs(I still used pre-cooked chicken). Overall I would give it a 4. It does taste VERY diferent when you make the sauce opposed to using a jarred sauce. If you make it using a jar sauce, it isn't going to turn out as good. I have made it both ways and I was going to use jarred sauce again last night, but I realized I was out at the last minute and had to make the sauce in the recipe instead. Turned out much better!

Red Garlic Mashed Potatoes

Used milk and butter, left out the sugar. I didn't think the sugar would add anything postive to the dish. Used Lawrys instead of steak seasoning as I didn't want chunks of seasoning in the potatoes. Pretty good.

Apple Cider Chicken Marinade

Lyndsie's Dr. Pepper® Meatballs

These were actually pretty good! I didn't use the whole can of Dr. Pepper, I think it would have been too much liquid if I had. I also left out of tomatoes. I didn't think the sauce tasted like Dr. Pepper, just a sweeter BBQ sauce.

Mom's Buttercream Frosting

As is, its not very good. I beat the sugar with the butter/shortening for 20 plus minutes and it was GRITTY. I decided to add the flour/milk mixture while still warm, hoping it would help with the sugar. It did a bit, but still was a little gritty. I tasted it and it was pretty bland, so I added some almond extract and a few shakes of salt. Like others said, its more like whipped topping than the frosting I'm used to. I also had to add some powdered sugar to sweeten it up and thicken a bit. Edible, but I would not go through the trouble to make again.

Sugar 'n' Spice Nuts

We didn't care for these. I read the reviews and thought they would taste like the ones at the mall, they didn't. Too much spice, too much extra goo. Will mabye try a different recipe and find what I'm looking for.

English Toffee

I followed the directions and wasn't that impressed. The first thing my husband said was, "It looks funny". And it did, I cooked it and checked the temp, but it stayed a very light color, not the deep caramel color we were looking for. It tasted ok, but it did not have the deep buttery taste either. Mabye becuase it was white sugar instead of brown? I won't give it as gifts like I was going to. I will probably send it with hubby to work, they eat anything. I will keep looking for another recipe though.

Tiramisu Layer Cake

This tasted much better the second day. I also doubled the amount of coffee liqour in the recipe. My guests really enjoyed it, I wasn't as impressed. I couldn't find the cheese needed in our small town so I used the substiution I found.

Chocolate Sour Cream Fudge

I followed the directions EXACTLY and it turned to a rock hard clump in my pan! Don't make this, the chunks we got out weren't even good! I will stick to my recipe with fluff. Zero stars.

Turkey Shepherd's Pie

I had to change a few things, since we brought leftovers home and didn't cook Thanksgiving at our house. I used the stuffing to make a crust on the bottom of a 8x8 pan. Then I put a layer of green bean casserole,cubed turkey, a layer of corn, some cheese, then a layer of instant mashed potatoes (prepared). I didn't have any gravy or carrots. Husband liked it and it used up alot of leftover.
