When I'm not planning for my next vacation, I love to try new foods. I stopped eating red meat a bit over a year ago and I think I may have finally kicked the fish/seafood habit as well. It's been easy to make the change by adding in more vegetables and fun recipes found at allrecipes.com.
My favorite things to cook
I love cooking stir-frys. I'll try to stir-fry almost any veggie and I've added in just about every sauce/spice combination you can imagine. When I'm not stir-frying something I'm busy trying to perfect the perfect banana plus some other fruit smoothie.

Mini Corncakes with Basil, Avocado Spread and Smoked Salmon
I made this for an appetizer tonight with our meal. It was so tasty. I thought the corncakes were going to be a bit crisper, but they were very moist and delicious. When eating it's important to get that 'perfect' bite of salmon, cake and avocado. I only had to use one avocado and every thing else stayed the same for ingredients. I kept all the ingredients pretty much the same with the addition of a bit more milk in mixing the corn in step one. Oh i had thought about adding in some sugar since that's how I take my cornbread usually, but I'm glad I didn't. Recipe is perfect as is! Thanks!

Coconut Curry Tofu
Very tasty dish, that I found needed only half of the chili paste and extra garlic. All of the ingredients turned out delicious over Jasmine rice. I did press the water out of the tofu and pan fry with peanut oil and garlic.

Aunt Mary's Eggplant Balls
Just made these as burgers for lunch. They taste okay, but it's missing something. I tried strawberry jam and then hot sauce, but it just didn't work with either. I will not be making these again, unless I was in the mood for spaghetti and had some tasty spaghetti sauce to use atop.
