About this Cook
I am 28. I teach sixth grade here in Bethel, Alaska. I LOVE my job! It is really the funnest job in the world! My husband and I moved up here from Minnesota three years ago and really enjoy it. We have three dogs, and I have three birds in my classroom. Life is incredibly exciting if you let it. I am pretty active in my church. I am really starting to gain confidence and skill in my cooking. I have been a pretty good baker for quite some time. I love this website to help me broaden my horizons!
My favorite things to cook
I LOVE breads of all kinds. I am really trying hard to make healthy/whole wheat things. I love to bake fancy items. My favorite is probably working with fruit desserts. It just seems to be my passion. My husband encourages me strongly to make a lot of Mexican, esp my enchiladas! I make something called Knoephla (German, sort of like spaetzle) for friends and family.
My favorite family cooking traditions
I grew up in rural North Dakota. Farming is in my family everywhere! We had a lot of Knoephla growing up. We didn't have much money, and knoephla is pretty cheap to make! I remember all of us standing around the counters, mixing up the dough and laughing and sharing. I loved to pick up a big goo of dough with my hands and scrape finger-sized portions into the boiling water. I loved to scrape the boiled dough into a frying pan and hear it sizzle! I love to steal (still) pieces of the crispy dough while cooking the rest of the meal!
My cooking triumphs
I made taqueria style tacos (off of this website) and it was AMAZING! I bought 3.5 pounds of rump roast (because we don't carry the called for meat) and all the food WAS GONE! We only had four people to eat all that food and it disappeared! I then made a three-tier ice cream cake that looked pretty impressive (if I do say so myself!) and it was also good!
My cooking tragedies
I once tried to make mac and cheese with real cheese. Doesn't sound terrible until you learn that I used Pepper Jack cheese. It was AWFUL! Even my dogs wouldn't eat it. When they won't take more than a bite, it is REALLY bad! We still call it the Pepper Jack Mac and Cheese Incident.

Double Layer Pumpkin Cheesecake
This was oh so good! I added 1 cup of pumpkin because I had so much pureed pumpkin in my house and then just doubled the amount of spices. I also added an extra 8 oz of cream cheese because any time that I have made a cheesecake with less than 3 boxes, I just haven't cared for it. So for personal preferences, I added. I am sure it would have been great without any additions. I did the water bath and NO cracks! :) It was a VERY good cheesecake!

Chocolate Cookie Cheesecake
this is the BEST crust I have ever made! I use it on all of my cheesecakes now!

Amazing Whole Wheat Pizza Crust
For a whole wheat pizza, this is incredibly good! WOW! One of the best crusts I have ever made. Yes, it took some time to rise, but so worth it! Also, my dough rose quicker than stated because I preheated my oven to 200 degrees and turned it off when it reached that and placed my dough in there. It shaved about 1/2 the rising time off. SO good! I will be making this again!
