Old Settlers' Baked Beans

Wow, great! I made it as written, except that I omitted the white sugar based on all the reviews, and it was plenty sweet. I may even do 1/4 cup of brown sugar next time. And there will definitely be a next time! I used a smoked bacon from Trader Joe's, and my husband and I loved it. The kids... notsomuch. Oh well! They'll come around!

Scottish Bubbles and Squeak Patties

I thought this was really good! I tripled the recipe to take to a pot luck, and it was well-received. I followed the recipe almost exactly, except I sauteed the onions in a little butter before mixing them into the rest. I did cook it differently, as suggested by another reviewer -- I spread the veggies into a 9 X 13 dish and topped them with the cheese, then cooked it at 375 for about 30 minutes (until it was warm and bubbly). The food was almost room temperature by the time I did this, though, since I'd made it an hour or so before I needed it to go in the oven. I will make this again, but will probably try it as the patties next time. I will add more Dijon, too -- it was there but not strong enough for my taste. Leftovers are apparently pretty good, since my husband just ate them for breakfast with lots of Tabasco and some sunny-side-up eggs! :)

Sugared Black Raspberry Tea Cookies

These are wonderful! I actually made them pretty much as written, although I rolled them in turbinado sugar instead of regular. I used Trader Joe's seedless blackberry jam, and I put it into a small zip-top bag, cut off the corner, and piped the jam into the thumbprints. I must have made mine very small, 'cause 1 batch made 47 cookies. Yum, yum!

R and R Pudding

This was pretty good. I used brown sugar instead of white, and used a package of Trader Joe's Frozen Organic Brown Rice. Otherwise I actually followed the recipe! My kids ate it (I sprinkled a little cinnamon-sugar on theirs and told them it was dessert :D) and my husband had seconds. He ate his with Tabasco. Rutabaga will never be my favorite thing, I think, but at least we tried it and now the CSA rutabaga that's been in my fridge for a few weeks is gone. :)

Top Shelf Margaritas on the Rocks

Wow. Yum! I made the recipe to take to a Cooking Light supper club tonight, and it's a very authentic-tasting margarita! It's a fair amount of work, juicing all the lemons & limes, but the final taste is worth it for sure. I rated the recipe a '4' because I used 1/2 the amount of tequila (using the whole amount would have been waaaaay too much, for me). I also omitted the egg white; although I'm not too squeamish about raw egg myself, I'm bringing it to serve to a group. Plus, I want to use the leftover sour mix to make lemonade for my kids. Thanks for the recipe!!

Surprise Banana Cake

This was wonderful... I did as ROBINBRADY did, halving the whole recipe, using 1/2 tsp of baking powder and cooking for 25 minutes in an 8 X 8 pan. I omitted the nuts but sprinkled the top of the batter with 1/4 cup of chocolate chips. We had it warm for dessert and it was chocolately banana goodness!! The whole family loved it.

Banana Oat Bread Pudding

I have been making this for a few years now. I use an egg, applesauce instead of the butter, 1/2 cup brown sugar, 1/2 cup of raisins, 1 tsp each of cinnamon and vanilla, 5 slices of bread, and usually only 2 chopped bananas. So, yes, I make some changes. :) But anyway, it's wonderful and obviously very easy to tailor to your liking. We had it last night for dessert while warm (the kiddos put a little choc. chip ice cream on top, and I drizzled it with a little Hershey's syrup), and I just had some cold. It's a great and easy way to have just a little something sweet and use up the stale bread ends and over-ripe bananas you have in the house!

Porcupine Meatballs III

I've been making these for a few years now -- this recipe is one of my regulars. The whole family likes them! I add one tsp of Worcestershire and also a dollop of jarred garlic (mixing them into the meat). Also, I typically use brown instant rice and after browning the meatballs in a small amount of olive oil (no shortening), I pop 'em into my crockpot! About 2 hours or so on low and they're perfect. Thanks for the recipe!

Black Bean Hummus

Wow, I actually followed the recipe pretty much exactly! The only variation I made was to only use 1/8 tsp cayenne (I'm a spice wimp) and to omit the olives since I'll be using this as sandwich filler. This was simple and fabulous, and I will make this many, many times. This may help some people: mine made 1 1/4 cups of hummus, which translates to 1 Weight Watchers point per 2 T serving (58 calories, 2.3 fiber, 1.7 fat, according to the ingredients I used). Thanks for this simple and tasty recipe!

Spaetzle I

I use 1 cup of milk instead of the water, and tend to let them sit for awhile, stirring occasionally, before cooking. I *love* these -- I usually serve them with (like tonight) my mom's Chicken Paprikash, or some type of stroganoff. My kids will eat them just with butter. :) Also, these freeze wonderfully -- just butter them up a bit, then put in a freezer zip-top bag. It's great when the hard work of getting the rubbery dough through the spaetzle press makes TWO meals instead of one!

Best Chocolate Chip Cookies

These are great! I did make changes... (I know the purists out there don't like ratings when there have been changes, but *really,* isn't that why we all come to allrecipes.com? ;) To see how the recipe can be tweaked?) I only made a half-batch, and I decreased the brown sugar to 3/4 cup and omitted the white sugar entirely. I used 1/2 cup of ground oatmeal in place of some flour, skipped the dissolving-baking-soda step, and omitted the nuts. I only used about 3/4 cup of mini chips instead of a whole cup since that's all I had. I made them slightly smaller (my half-batch made 28 cookies), refrigerated them while the oven preheated, and cooked them 12 minutes. I'm really happy with them! Thanks for the recipe!

Chocolate Chip Banana Muffins

Wow. These are unbelievably good. I did what many did -- used 1 cup AP and 3/4 cup WW flour, 1/2 cup white and 1/4 cup brown sugar, increased bananas to 3, decreased oil to 1/4 cup, and used sour cream. It made 12 big muffins, and cooked 30 minutes in my stonewear muffin pan. My 3 year old and I made these today and it is only sheer January willpower that keeps me from eating them all while snarling and swatting at the other family members to keep them away. :) Thanks for a great recipe, Lois!

Oregon Salmon Patties

I liked these! I added all the cracker crumbs into the mixture, used the juice of one lemon instead of reserved can liquid, used 1 T dried parsley, and added 1 tsp of dill. They held together really well for me (I made them ahead of time and refrigerated them several hours). I made 8 patties. My 5 YO ate 1/2 of a patty, although my 3 YO only had her required "No-Thank-You Bite." My husband ate 4! I served them with a mustard-mayonnaise sauce. I will do these again!

Breaded Brussels Sprouts

Wow, very good! I had about 2 feet of sprouts on the stalk from my CSA, so I don't know how many pounds that was. They took more like 15 minutes to boil to tender, however, and they were still al dente. I followed the rest of the ingredients exactly, with the exception of 1/2 the pepper (I only used 1/8 tsp). DH, my 5 YO son, and I loved them. My 3 YO daughter was not impressed. :) I will do these again! Until a few weeks ago I didn't even know I liked brussels sprouts!

Roasted Beets with Feta

Fabulous!! I made this two days ago... roasted the beets in the morning before church, and mixed up the vinaigrette, then sliced the beets and finished the prep right after church. Ate them for lunch. Today I'm eating the leftovers cold, and it's just as tasty! I followed the recipe exactly, except for using 1/8 cup of finely minced onion instead of the shallot (didn't have). Thanks for this tasty and simple recipe!

Apple Hermits

These are wonderful! I mostly followed the directions (exceptions: I used only 1/2 tsp of the cloves, and used 1 1/2 cups finely diced apple since that was 1 apple, and omitted the glaze) and I'm glad I did. They came together very quickly, are very tasty and infinitely "tweakable" which is something I love to do. :) I didn't tweak today since I'm bringing them to a block party, but I sure will in the future! My single batch made 41 cookies.

Oatmeal and Wheat Flour Blueberry Pancakes

I thought these were wonderful! I made some minor changes based on the reviews (only 1/2 tsp salt, some cinnamon, used 1 1/2 T of baking powder, used all WW flour, canola instead of olive, and I used dairy milk). I had to omit the blueberries (kiddos love blueberries but not IN their pancakes). My kids only know healthy pancakes, so they ate them. Very filling and satisfying to chew. My batch made 22 largish pancakes so I have plenty in the freezer! I wonder if those who tasted a bitter or strange aftertaste used baking soda instead of baking powder?

Garlic Red Potatoes

Really easy!! I read a lot of the reviews and this is what I did: sliced the potatoes (about 7 largish red potatoes), put them in a glass 2-quart baking dish, then poured the butter, garlic, salt and lemon juice over the top as described. Then added a splash of olive oil. I microwaved them for 8 minutes on HI, stirred, microwaved them for 5 more minutes, then added the parm. (Probably quite a bit more then listed -- we loves us the parm in this house!) The grilled chicken isn't ready yet, so I'll probably heat the potatoes another minute when we sit down. These are very tasty, and certainly simple! Next time I'll do them in the oven, as I'm sure they'll be prettier and a little more uniformly done. But I'm certain DH and my 3- and 5-year olds won't care...

Pizza Pinwheels

We really liked these! I didn't have crescent roll dough so I made a batch of my own easy 1/2-whole wheat pizza dough, divided it into three 6-by-12 inch rectangles, and went from there. I topped them with a scant amount of pizza sauce, a dusting of garlic powder, a sprinkle of grated parmesan (just the Kraft kind), a thin layer of shredded mozzarella, and a thin layer of chopped pepperoni. Don't overfill! I rolled them up tightly and refrigerated for an hour or so before cutting and cooking at 400 for 12 minutes. I recommend you lay these on the flat while cooking (as one reviewer suggested) to avoid the cheese oozing out. Mine puffed up beautifully and were really attractive. They were a HUGE hit with my kids, my husband, and the kids/adults at the get-together we went to. I did not find mine to be messy at all, in fact, will make these again just to have *less* messy pizza nights for my 2- and 4-YOs and myself/DH. Thanks for the great recipe idea!

Easy Sugar Cookies

These were certainly easy! My kids wanted to make cookies and we didn't have a lot of time... so we made these. I just sort of fashioned them into flattened circles and let the kids decorate them. Then while we ate lunch I cooked and cooled the first batch and stuck the rest of the dough in the fridge. I rolled them out afterwards, and it went OK -- the dough was easy to roll and cut, but they definitely spread while cooking, so this isn't the recipe for intricate cutouts. I actually followed the recipe exactly (I never do that!) and was pleased. Tasty, easy to make, easy to work with, easy to clean up after. Not the best cookie ever, but a versatile kid-friendly and easy recipe. :)
